I had a thriving village, So at the edge of the village I built an iron golem farm. I put the beds and zombie under ground with water fall over the top into lava. Then I destroyed the thriving village, so that golems would spawn over the center of the farm in the water. However, still golems only seem to spawn back near the old village center. (there is no village nearby now). I thought the village center would relocate after getting rid of the doors/beds. Also the golems spawn, but at a relatively low frequency.
Btw, when they spawn, I can lure them over the wall into the water, by hitting them and bouncing through the water, but it's a pretty inefficient and no afk.
Thank you both @liam and @hexa for your thoughts. This is basically , but underground. The villagers have the beds/workstations and a zombie. Golems are spawning intermittently, but much less frequently than I'd expect and also, sometimes outside the center.
Thanks Scorrp. It is really far from any other village. Shouldn't Minecraft update after existing villages are removed? Good call on in the air though. I'll give that a shot to see if it helps.
(In case wondering why it was done this way: its just so much easier to move the villagers this way.)
Seems rather low. Check out DocM77 iron farm design. I built one (two 3-villager cells, one zombie) It easily generates 500+ per hour, and can be easily tiled up to double or triple that.

Im no expert, but I’d say It’s just simply because you build it close to a village in the first place.
You don't mention where you put the villagers?
In the latest versions of Minecraft the golems are spawned around the villagers, "in a 16x13x16 box centered on the block the villager is standing on"
And I'm pretty sure the villagers need to have used their beds and workstations recently as well as having been scared by a zombie.

Seriously, at 2:30 in the video:
"Location is sort of important. It should be built 20 or so blocks in the air and definitely not near any villages."
And you stash it just underground right next to an existing village.
"You build it on the ground or slightly off the ground, your golem spawning will not be as controlled"

Now getting ~80 ingots/hr afk. Not great, but not terrible.
