After a very rocky start with the game, I started a new world to play along with my girlfriend.
This time things got a lot better, we got a good house, tons of animals, we dug to get diamonds, I made floating highways into the nether, and explored all the area covered in a 4/4 map without seeing much of interest, a few dead villages and one still alive. But I have heard that there are fortress to raid and such... so I was wondering if we should leave our house and just start again in a different place (my girlfriend wants to see pandas...).
Not sure what you mean "covered all the area in a 4x4 map". And why move?
my world reaches out ot over 4k blocks in all directions and over 9k where I went to raid a mansion, but I'm not nearly done explorering all that area. In the nether, I'v raided 2 separate fortresses and there are still many more. I've cleaned up 1 stronghold but haven't yet entered the End on this world as I am still doing other interesting stuff. My base is still where I started it although I've over a dozen outlying hideyholes to sleep as I'm out and about.
Just take a bed in your inventory and travel! On foot, by boat, or by rail if you've built some, but get out and go.
As an aside, I haven't found either pandas or an igloo yet although I have over 300 real life hours adventuring in this world. I wish you luck, but these things are rare.

First you should look for a bamboo forest. Don't pack up and leave your house without knowing where to go, cuz then you'll just end up in the middle of nowhere. Guess you'll have to make another map too if you've already filled your current one out, you don't want to get lost out there...
BTW bamboo forests are pretty hard to find. Many worlds don't have much jungle, so the odds of you finding a jungle biome and then also a bamboo one inside of it is, well, slim. Nevertheless, have a nice adventure.
Take some obsidian and flint & steel. Once you find a place you want to stay a while, you can go into the nether and make a path between the two portals. This will allow you access to your stuff.
You could always make a second base elsewhere and as long as your first base is near spawn you can always find your way back with a compass.
If you do want a permanent move you could use the /setworldspawn or /spawnpoint to change your spawn in case you should die or get lost and want to use a compass.
I would suggest writing down the coordinates of your current base in case you want to find it again, or build a path to it from 0/Y/0
Why move? Just explore further and further out. I have a main base that is pretty large, with lots of animals, crops, villagers, a massive storage room, enchantment room, and all the comforts of home. Then I have lots of smaller bases that are basically just houses with beds, Ender Chests, furnaces and other basics, spread all over the world. The only Forest Mansion I've found is about 5K blocks away, and the nearest jungle is about 3K blocks away. So for more important finds like those, and strong holds, good mines, things like that, I have a nether rail system connecting everything.
The world I've explored so far is about 10K blocks across.
No need to move your whole base. Just write down your main base's coordinates, or make a compass if it's close to spawn, and go do some exploring. Set up little places with basic supplies, and bring all the good stuff back to your main base.

Prep for End.
Go into End
Take out the dragon.
Explore to find End cities, get shulker shells, and most importantly, Elytra.
Once you got ender chests with shulkers and elytras with mending, world exploration becomes a great deal more fun.
