I cured a zombie villager who had been a farmer from his costume and he turned into an noprofession villager. He wandered into my house and over to a loom, and became a shepherd. I cured another who had been a librarian and he also became noprofession. I gave him a lectern, and he became a librarian again. I destroyed the lectern and he returned into a noprofession.
Does this mean you could force change a villager to another profession by destroying his workstation and replacing it with a different one?

When it comes to curing villagers for discounted prices, normally, you get the trade/price you want, then let a zombie tag them (so long as you're not in easy mode). Kill the zombie, cure the villager. In 1.14, it's so easy to get the trade/price you want simply by picking the work station up over and over there's really very little reason to do otherwise.
