Alright so I found a village and I was thinking about tearing everything down so I can use the materials, but that brings up the question.. What happens to the villagers?
Is it really worth it to destroy the villages or should I leave it alone?
Hahah wow you're so kind I personally don't tear them down I just take items from chests. The villagers will wander around the destruction of their homes if you do destroy it though

Leave the village alone, they might trade you good stuff.
If you do tear it down they will easily get attacked by zombies and possibly get infected.
Expand the population by making more houses so the villagers mate and iron golems spawn!
I usually kill them, burn their village down, and then eat some porkchop in the sunset As of now they're pretty useless. Hopefully that will change in later updates.
They allow you to turn things like wheat, wool and zombie flesh into diamond gear, enchanted books and nametags. What more could you possibly want from them?
As for tearing down villages, the only time it would be even remotely worth it is if you're playing on a superflat world. In a regular world tearing down the buildings themselves will only give you resources that you could gather faster by getting them the normal way, so it doesn't really benefit you. If you did destroy the houses the villagers would end just end up wandering around until they were inevitably eaten by zombies.

Well I never destroy Villages Unless in superflat Because I can get emeralds for wheat and raw chicken, Then get diamond armor, swords, picks, You can get anything of value from villagers Obviously Cookies are the most prized things in minecraft, Duh.
Sometimes I leave them for easy trading of materials, but in late games where I already have mostly over stocked all resourses I could get on the game, I kill them for fun trying to make them my archery practice target dummy. Or as I like to call them, Jimm (for no specific reason)
Well depends, if you stay in the general area and are close enough that hostile mobs can spawn close to the village or should i say used to be village, then most likely they will die off, if you how ever go far enough that the chunk unloads then they will be from what i know, kinda frozen there and safe in terms, not sure if there is a despawning on villagers that have no home
