I have a very big problem: two witches got stuck in two of my fields, just in front of my house,. I tried everything to kill them, but they always hit me, one killed me and I also lost my arc. I have inserted the rule "keep inventory", but my arc and sword got lost. What can I do? I have already watched tutorials, but they all require something I don't have, or I've failed using them. If they're so rare as they say, why did I get TWO of them in five days of game? I've been playing just for a week...

If keepInventory didn't work that most likely means that you misspelled it when you typed it in (it has to be spelled as I wrote here, including capitalization, or the game will just make a new gamerule with that name, which is useful for custom maps).
Also, 2 witches in even 5 in-game days (it sounds like you are referring to real-life days of some amount of time spent playing per day) isn't uncommon; they have the same spawn rate as zombie villagers, which are 5% of zombie spawns, and about 1.2% of all mob spawns, so about one in 83 mobs will be a witch (for comparison, I kill an average of about 100 mobs per hour spent caving, so that's a witch every 50 minutes or 2.5 in-game days. Real-life days will depend on how much you play per day, and how often you encounter mobs with your playstyle. Also, since zombies have a larger "followRange" than other mobs they are more commonly encountered than their spawn chance (about 24% of all mob spawns) suggests while other mobs are less common; my most extreme play session saw 796 mobs killed, of which more than half were zombies and only 5 were witches, much less than the 9-10 expected (they reduced the range of zombies in 1.8 though).
I think you mean bow when you say arc. Craft another bow and shoot at witches from a distance. I'm pretty sure you can negate any negative effects that they throw at you by drinking milk, but I have never needed to. Good luck!

I built another bow, but either I can't reach them, or They can reach me...and I still don't have milk. I had just built my first bucket when the first one appeared. If they will go away, I can bring my bed with me and sleep in a cave for a couple of nights far away from there. Would be 2 nights enough? But firstly I have to set them free, hoping animals won't escape too, but I will be hit again, 'cause the paddoks are small.
You don’t have to set them free, just go far enough away and they will despawn. You can also turn on peaceful mode to make them disappear immediately. The first thing you should do when you build a little shelter is to light up the area with a lot of torches including on roofs so that no mobs will spawn at night. Put torches on the fence of your animal pen and on the ground in the surrounding area. I always build a fence around my house as well and am never bothered by mobs.
Unless there's something in the way, like if the witches are standing under trees or if the animals get in the way, you should be able to hit them with a bow from far enough away that they don't even notice you.
It takes some practice, and maybe a lot of arrows, aim above their heads, if the arrow goes over you lower your sight a bit, if it doesn't go far enough you aim a little higher.
If you manage to kill them before the missed arrows despawn I think you can pick the arrows back up.
My "keep inventory" works very well, I got back a lot of items, I just lost a couple of them. Maybe they've just fallen down in the pen where the witch is.
In fact, I didn't put torches outside the house...I've been very stupid, isn't it? I'll put them all around my turf!
So I just walk away and stay far away for a while? Good! Easier than I thought!

I sleept 200 blocks away for a week: nothing. I opened one pen and did it again: she went away. I opened the second one, did it again: when I came back, one was stuck in another pen, the other was walking aroung my house. They're still there.
If I turn to peaceful mode, can I change it back after those two witches disappeared?
The witches probably had picked up some object and that kept them from despawning.
Yes, you can switch back to Normal, Easy or Hard difficulty on the options screen and the witches should despawn in Peaceful even if they are holding objects.
An alternative is switching to Creative mode, then you can just go up to them and whack away with your sword and they won't fight back.
The week you spent away from your base was way overkill, all it normally takes is going more than 128 blocks away and coming right back, mobs that aren't named or holding picked up items despawn immediately when you go far enough away.
If keepInventory was working properly you wouldn't get anything back you would still have everything when you respawned, nothing would have fallen anywhere.
Yes, you can turn normal survival mode back on after the witches have disappeared. By the way, you needn’t sleep somewhere else for any length of time to make mobs despawn. You only have to go far enough away and can come back immediately.
The easiest solution is to just shoot them with a bow. If you can’t shoot them through the animal pen, get up on your roof or build a pillar to stand on that will give you a clear shot. As somebody already posted, you can kill mobs at a great distance. If your arrow falls short, just aim higher over the mob’s head until you hit it.
Putting enough torches or other lights around (and inside!) your house should prevent mobs from spawning there. It won’t prevent mobs who spawned outside of the lit up area from coming to your house, so you need a fence around your house to keep them completely away.
That doesn't explain why the witches won’t despawn and why you keep finding a witch in your animal pen. If the pen is lit up the witch shouldn’t spawn in it, and if the pen has a normal fence that mobs can’t jump over, the witch shouldn’t be able to get back into the pen after you let it out. Do you have mods installed in your game that could change the normal mob behavior?
EDIT: What version of Minecraft are you playing? There is a mob in Minecraft 1.14 that can spawn in lit up areas and inside pens: the illager patrol mobs. Are you sure your mobs are witches and not illagers? In the upcoming update this will be fixed and the illagers will no longer spawn in lit up areas.

Yes, items can fall in the pen if you are standing exactly above it trying to kill the first witch when the second one arrives and kills you. I built my house in a mountain, pens are in front of it, between the house and a river. From the side of the mountain I built a sort of boardwalk one block wide to go on the witch and use my bow. While I was trying to kill her, I got hit by something. It was the potion of a second witch. I had already lost a heart for a jump, so she killed me. Items I had on me where on the boardwalk, when I returned there, but if something was in the block to my side, it would have fallen exactly in the pen, 'cause there wasn't anything underneath it. So maybe she has picked up some of them.
@Toad As I told Hexa, I really tried to kill them, but I can't. I'm not very keen on using a bow, I just can't hit them. Witches aren't spawning in my pens, they just fall in them while walking, and can't get out. That's the purpose of a pen for animals, isn't it? I'll try to surround the area with fences, but it will take a while, and I can't do that as long as witches are there. I think I made somethin very stupid, indeed: I didn't build pens with fences, but I digged them in the earth...I thought I would have spared a lot of wood... Oh, now I understand. You can dig a hole for your animals, but you still need a fence or barrier around your whole base to keep the mobs out. I think fences look nice, but I often craft cobblestone walls simply because I have more cobblestone than wood. If any of your belongings dropped when you were killed, that means you haven’t used the “/gamerule keepInventory true” command correctly. When that command is active, none of your belongings are dropped when you die. If you play normally, all your belongings will drop and you can return and fetch them within around 5 minutes.
For me they're not so easy to kill...I'm a very beginner! But I'll learn. I used creative mode and I sliced them like a roastbeef Now I'm on normal mode again, and I'm putting fences everywhere, hope life will be easier now. Just one more question: now I put fences I have to open gates to enter pens. How do you prevent animanl from escaping?

If you want to cheese the system, you could always put a carpet on the corner of the fence to jump on to get in and out. Otherwise have the appropriate breeding item in hand, walk to the farthest point of the pen to lure them, then switch item in hand and run to the fence gate. I also recommend solid walls over fence. Until fences are 100% fixed of glitches, it is the best way. Prevents them from being stuck in the fence, as well as glitching through it when chunks unload and reload. If you want it to look more natural, dirt or grass blocks at least 2 blocks high to make a nice paddock. With lighting, you can put torches on the actual fence posts along with the new lantern. It doesn't have to be on every post Also realize if your pen is rather large in size, this method will not prevent mobs spawning in the center and you may have to drop torches or other sources of light there.
I wasn’t aware that fences are glitchy. I have never had any problems with fences, and nothing has ever got stuck in mine. I don’t like gates in my animal pens because it is a nuisance to have to lure the animals away from the gate with food before opening them. And I often open them by accident when I am wildly right-clicking to feed the animals. So I usually just place a piece of carpet on the fence and jump on the carpet to get in and out. I also have several pieces of carpet on the fences or walls surrounding my whole base so that I can jump over the fence on any side to get in and out. It looks funny, but it is practical.

witches are easy to kill, dodge em potions splash.

I put a block on top of the fence and put a ladder on either side of the block.
Then when I want to get in or out I just run up to the fence, jump and keep pressing forward and go right over.
