I like my villager that sells silk touch book for 8 emeralds more.
You can get emeralds easily if you have a breeder (Even without perfect villager)
but to get silk touch books you must enchant stacks of books at level 28.

Priest: Red/glowstone (not picky)
Farmer: Chicken (Smashing chicken tube FTW)
Butcher: raw steak/pork (maybe saddles)
Blacksmith: iron (Iron Trench baye-beh!)
and of course the librarian: paper
I WILL obtain all of these... Librarian first though
As far as how much wheat you need to get an emerald, yes it is.. But it's far easier to grow and harvest mass quantities of sugarcane.. I have 8 rows of 128 in a desert and all I have to do is run down a row breaking and collecting so it's very fast. Then I have a minecart system to send it all over to my trading center.

The blacksmith is very difficult to get and in my experience not worth it.. As you get closer to the last trade it gets harder and harder to get a new one.. I filled a chest with iron helmets at one point. I got to about trade # 23 on one guy and asked myself why I was trying to get 1 perfect blacksmith.. Instead what I now do is get 2 with about 10-15 trades done and with that I have all the diamond trades etc I need between the two of them.
I was finally able to get a perfect librarian villager with the last trade being a paper trade. now I can get unlimited emeralds. here are some pics and a video of him. also if you can think of any names for him that would be great.

Yeah i didnt really intend to grind it to bits. once i get 5-6 diamond stuff i will probably never need him again. He is gonna be last and MAY get completed at some point.

You'll still need him to get "free" diamond stuff for repairing.. Far better to do that then use up your diamond supplies... I harvested my wheat farm yesterday, got a stack of emeralds and bought a couple or so each of diamond shovels, picks and axes.. I just keep them until I need to repair my enchanted ones so I don't have to waste my actual diamonds... although.. I'm sitting on 4 stacks of diamonds now and not sure what to do with all of them..
I thought I'd bump this to see whether the new snapshot has changed the villager trading system/strategy. Are there new perfect villagers? Are our old perfect villagers no longer perfect?

I am pretty sure that the villager trading mechanics haven't changed in any way, so this trick should still work.
Also for the OP: Congrats for getting infinite emeralds!
After quitting and returning it seems all enchanted books are free (no emeralds, just one book).
Also I had, what I thought was a villager with a paper trade as his 8th and last trade (the 7th was silk touch) then came a second enchanted book trade for infinity as a 9th trade.

Best trades I have had personally are:
Efficiency V - 19 Emeralds ( Although once I maxed out that trade it immediately switched to something .)
Silk Touch - 5 Emeralds
