When 1.2 comes out I may attempt this. With so many items available now without use of a crafting table this challenge is actually more possible than ever. It is very doable. Fighting the ender dragon and destroying the crystals with only iron armor and sword would be a little more challenging.
On topic, awesome, this would be possible and really hardcore, I'm not going to try it though (I don't have the patience for it). And what is the skyblock way of lighting a portal exactly?
In skyblock, you can light a portal by placing lava at or letting it flow to one side of the portal frame, then placing a flammable block on the other side. When the lava ignites the block, the portal should light up.

If you can't use crafting tables, what is the use of collecting wheat. (Unless you mean to make a farm, and not bread by herding and breeding animals.
Im not one for challenges but you know what. People always say stuff is impossible. Time to prove people here wrong! I will post pictures with updates on this.

You can trap animals (preferably cows or pigs) in a hole, then build a wooden house around them. Then, you can use the wheat to breed them, then kill them for food. Eventually, food supply will never become a problem. In addition, if you find a blacksmith in a village, you can use the furnaces to cook the food.
It is impossible, you can only get snowballs from shovels, which require a crafting table. You also can't make a Nether Portal as it would be very hard to find a 5 deep lava pool, then get water from the surface there, all the while not sing picks. Maybe it isn't impossible, but it'd be boring as hell.

To open the end portal you need blazerods, blazerods you get in nether. You cant get to nether as stated above, you can craft diamond pickaxe to get obsidian.
Good try though, it is possible to stay alive however.

Also, can someone find an easy-to-remember (not a bunch of numbers) seed that spawns you near or in an npc village? Or even better, inside a village house? Make sure the village has a blacksmith. This would make the challenge a lot easier.
the seed Krosis has a village close to spawn with a forge with iron pants, 1 bread, and 4 saplings. There are a couple problems though, 1 its a plains island so those 4 saplings are your only trees, also its an island so finding a stronghold will take some swimmingAlso
1st village has 8 apples and an iron chestplate, 2nd village (partially submerged) has 4 iron, 4 saplings, 7 bread, iron boots, iron pick and 7 obsidian, 3rd village has 6 apples 2 bread
Have funalso there's a taiga biome right next to the 3rd village

Still, its hard so I wont do it.
This, I think, is very, very difficult in 1.1, but would be a lot more possible in 1.2.
