I just cured my first Zombie Villager. He's actually the only villager in the world. I'm playing a water world (Hardcore, Buffet: Deep Warm Ocean) with zero land so no villages obviously. I killed a Witch and got two Sugar then made two Fermented Spider Eyes so hopefully I can find him a friend soon (but I'll need to find another Golden Apple first). My base is at the bottom of the sea. Would he open a door that leads to water and walk out and drown? Could a slime spawn and kill him? I have a couple of Iron Golems wandering around. Could they accidentally hurt him when trying to smash slimes? I don't really want to keep him locked in a closet. Should i just make him a house on the surface? It's fun to have a friend. I've just missed catching two chickens in this world, too. I killed the first one's Drowned and leashed him but another Drowned killed him with a trident while I was pulling him down to my base. I guess I should have made a ladder tunnel but I tried to swim him down. I actually caught another one in a cave and brought him home but he despawned. Very sad. I really want a pet. I read later that he wouldn't despawn if I used a Name Tag on him. Next time I'll be ready. I've named my Villager Bob. He's a Fisherman! Anyway if anyone has tips on Cured Villagers or reformed jockey chickens I'd be happy to hear them. Thanks!

I am too inexperienced to give you any advice about keeping villagers, but I hope that Bob survives and that you find another pet to keep you company. I’ve had chickens die in a house that didn’t have enough space above their heads, so make sure there is enough head space even if they hop up on furniture. I never had a chicken despawn on me, at least not that I noticed. Good luck!

I don't believe nametags prevent jockey chickens from despawning. I could be wrong, of course, but assuming I'm not then you'll need to keep the little guy close enough that he won't poof away (mobs that are closer than 16 blocks won't despawn at all, but mobs that wander out further than 32 blocks will have chances to despawn over time).
The reason they were made to despawn is because chickens can lay eggs and zombies can pick up eggs. Zombies that are holding items are not eligible for despawning, which could lead to a ton of mobs that eventually break your game.

And on the Chicken Jockey page it claims they were made to despawn just to keep the caves from filling up with chickens.
Chicken jockey chickens don't lay eggs since 1.8, so you'd need to have 2 to breed to get a chicken farm started.
I'm sure that the villager would wander out a door into the ocean given the chance.
Slimes shouldn't attack villagers and I wouldn't think that he would be harmed just by being bumped by a slime (unless he got pushed off a ledge or something.)
I couldn't say what happens if a villager gets in the way of an iron golem fighting slimes.
I would suggest making a safe area just to be certain, either making sure it didn't include any slime chunks, slabbing the slime chunks inside it or building it above level 40, fenced in with gates, iron doors or ladders to get out.
And curing another as soon as possible and breeding some extras, though that would require a light shaft to the surface, I'm pretty sure you could just use a pillar of glass blocks all the way up.

Setting up an underwater village will work, but (pre-1.14) the doors will need sky access (glass 'light-pipes' up to the surface of the water will work).
If you do build on the surface, remember lightning…

Thanks for everyone's help. I actually caught Bob opening the front door and walking into the ocean! He floated up to the surface safely. Luckily it was daylight. I threw a boat in the water and he jumped in. I got in and rowed him to my platform above my base. I had started on a structure going up from my base to the surface, so I quickly completed a room under the platform and got rid of the water. I built a staircase down and he walked in. He's there now. I have now cured another Villager, Dorothy, so now there are three of us in this world. Soon I will complete the structure and build a couple of village-style houses a little above the sea. I'm going to be careful to leave Bob and Dorothy no paths to the ocean. I'll have to make sure they are safe from Drowneds carrying Tridents, too. I found one more Golden Apple in an abandoned mine so hopefully I can find another Zombie Villager to cure.
