I make an item sorter and have a junk box and my item sorter has everything that I would call junk so if I put diamonds by accedent in my junk chest it will be on the other side of the item sorter in a seprate chest becaue it didnt go through then when junk goes into the item sorter they go into a single hopper which is connected to a dropper and when items are put into the dropper there is a redstone comparator that outputs a signal back to the dropper to dispense the junk into a 1x1 of lava or a cactus when there is no more junk in the dropper it will stop activating so you dont have to keep hearing it click over and over as if you flipped on a lever

I prefer to hold onto things if I can but sometimes yeah I really can't be bothered to go out of my way to store it somewhere I'll remember, in that case I usually just dump them on the ground, then burn them with flint and steel. that way, it's quick, easy, and portable, and if I accidentally drop something I actually want, I can recover it first then start over and it's not just gone the moment it leaves my inventory
When you're playing modded, you may have a number of options for item disposal. Extra Utilities 2 has a trash can that voids items placed into it. There's also a trash can option built into FTB Utilities. Unlike the EU2 trash can, items don't disappear until you close the GUI. This allows you to retrieve items you did not want to trash.
Then there's ProjectE. If the item has EMC, you can simply dump it into a Transmutation Table/Tablet.
Now if you want to void blocks in the world, the Destruction Gadget from Direwolf20's Building Gadgets mod is useful. You can undo this if you delete blocks you did not want to. This can be handy for voiding tall grass and other plants, such as the Garden blocks from Pam's Harvestcraft.
I no longer throw items into lava as I have accidentally lost relatively valuable items this way. Back before I started playing with any mods in my original world (this was in Alpha 1.22), there was a lava lake underground along one of my tunnels I made, and I had a very sensitive mouse. I threw my Clock into lava when I meant to throw excess cobblestone and had to make another one. After that happened, I got a less sensitive mouse.
I have an OCD need to hold onto every item I possibly can. Even if it means mining eight blocks to pick up that one piece of cobblestone. My junk disposal is usually either a very late-game cactus I drop poisonous potatoes and rotten flesh into. Otherwise, I make decisions about what to throw into lava whenever I see some. The rest is thrown into chests.

Come to think of it, I mainly play fighting-based games.
My most common design is a one block hole, three blocks deep with lava in and a trap door above with a pressure plate, so stand on the plate to open trap door and drop stuff in, but recently I was afraid of dropping the wrong stuff in, so I now dont use lava, just let them despawn.
I usually go for the trash can from Extra Utilities 2--fast, efficient, and you can automatically pump unnecessary items into it via Mekanism pipes (e.g. poisonous potatoes from the automatic potato farm). I do find sizzling items with lava a little satisfying, though! I have a dropper positioned over lava in the very same world as the mentioned potato farm, haha.
What a popular topic, an oldie but goodie! The only thing I dispose of are poisoned potatoes. My „garbage cans“ are simple holes in the ground covered with trap doors where the potatoes can despawn in peace.
One advantage of not having automated farms is that junk doesn‘t pile up, so I seldom have too much of anything.
I use stuff like surplus junk armor and weapons to reset my enchanting table, then I put them on armor stands or item frames as decorations.
I had too much netherrack, so I started smelting it into nether brick. Now I‘m paving the entire area around a lava sea in the nether with nether brick so I can easily fetch an endless supply of lava in buckets for my smelting ovens. It’s not pretty, but ghasts can‘t blast any more holes in the ground around the area.
One of the fun challenges of my world is finding uses for useless things. If I had huge automated farms that generated tons of junk I would have to find some other disposal method.
I just have a little hole with a ladder and a trapdoor. When I want to throw out some random garbage, I simply throw it in and let it despawn. When I mess up and throw something I didn't want to throw, I just go in the hole and pick it up. Also it doesn't make any annoying dropper + burning sounds.
My method was taken by a youtuber, it was a chest connected to a dispenser that tossed them into lava underground, all I had to do was insert unwanted items, and the dispenser would suck them out of the chest and burn them
