I managed to get this done in less than 3 weeks. (I think. Time has been flying by during this whole thing. I guess I could check the time stamps of my screenshots)

Dude, you're chasing your own tail. As long as you consider diamonds to be rare, you will forever be doing things extremely slowly. EVERYTHING has to be made out of diamond. It lasts forever, and has super fast rates. If you do the traditional branch mining method with a fortune 3 pickaxe, you'll come out with over 600 diamonds in about 12 hours. And you should NEVER make shovels, pickaxes, or axes out of any lesser material after your first week in a new world. If I did this with stone pickaxes, it would've taken the better part of a year. Instead, I got it done in around 14 days.

There's actually only 2. There was 3, but I accidentally destroyed one.
Do you plan to build it in order? By that I mean, route 1, 2, 3, 4, etc., or corner-corner? And which version of the map will you be using to re-create it?
1: Pig farms are usefull for getting porkchops to unlock some of the villager trades faster.
2: It's true that using stone tools to mine diamonds to save diamonds isn't efficient, in the time you save by using diamond effiency 5 pickaxe instead of constantly repairing your effiency 5 stone pickaxe you get much more diamonds than the 4 you need to repair your pick. (And diamond pickaxes mine faster too)
3: Are you planning to get villagers for all the enchanments? (On books)

I've done some testing in my creative lab on villager trading for enchanted books. Unfortunately, I was excited at the prospect of having a bunch of perfect villager enchanted book trades where say, I have an unbreaking III villager, an efficiency IV villager, a protection IV villager, ect. Unfortunately, when the villager opens a new offer, sometimes it may change the amount of a previous offer, or the last offer. That doesn't matter much, but when the offer for an enchanted book changes, the type of enchanted book changes as well! So we're screwed on that All I'll have is one perfect enchanted book villager, where his last trade is enchanted book, and I cycle through to change his offers to see what kind of book I can get at certain times.
This is just, amazing. It dropped my jaws and made me want to play Minecraft again. And has broken the world record for the man who mined the most number of cobble!

Villagers sometimes get an trade for an enchanted book that reguires more than 64 emeralds and you can't divide the emeralds into 2 slots. You will eventually need a new villager.
(Or you get Bane of arthopods 5 for 64 emeralds and you have to buy huge amount of them to change the enchanted book trade, but that's just huge amount of automatically farmed raw chicken/sugar cane/iron)
