I can think of a way to do it one layer at a time using NotePad++.
Set default font to a monospaced font and use a different character for each type of block.
Examples of monospaced fonts in Windows include Courier, Courier New, Lucida Console, Monaco, and Consolas.
NP++ has, in the Search function, a count command that will tell you the number of occurrences of individual characters and can be set to be case sensitive.
NP++ also has a column mode which could be used to fill vertical lines.
Also NP++ has a display at the bottom middle of its window indicating the current line and character position of the cursor.

If you aren't part of the solution, then you obviously weren't properly dissolved.
1. Build it in a creative world using Java 1.12.2 or below (you may have to use "stand-in" blocks for things that don't exist until later versions). Use WorldEdit to make things easier/quicker.
2. Use Schematica or MCEdit to analyse the structure, they will both give you an itemized list of all blocks used. Schematica will generate a 3D, ghost-like "Blueprint" in your world (1.12 or below) that helps you build the structure exactly as before. The function of this ghostly blueprint structure can be selected between a few options.

i usually count and multiply layers and add them up.
for example if i were to build a 100x100 wall that is 2 stone blocks thick, with 2 more layers of cobblestone on the outer and inner side, and make it 5 blocks high then id be like
100 blocks long x 2 blocks thick x5 blocks high x 4 walls to make a square = around 4000 stone bricks or around 62 stacks, or around 1x double chest +8 stacks.
With such larger buildings and structures i dont actually need a precise number, just approximate so that i can mine the stone in peace till i fill up my double chests and then i can focus only on building

I don't like giving too much info about the seeds i share. I feel like its better to let others explore and find out the chest contents,dungeon places and biomes. If someone is giving me a gift i would rather not know what it is until i open it for my self.
I want to build a very big apartment complex for roleplay reasons.
Is there some kind of programme that i can input data based on my blueprint so that i can know how many blocks i need.
furthermore it is not necessary for it to be related to minecraft so long as it can count for me

I don't think there's specifically any such calculator for this, but there are some voxel-drawing tools that are pretty nifty to work with:
