More wood is a great idea, just don't overdo it. You could also probably try putting some carpets somewhere, and you could change up some of the stone to different types/colours. Other than that, great work! What's at the bottom?
What you have has a very clean/minimalist look with the decor essentially limited to the patterns in the brickwork.
If you feel it's too far in that direction to suit your tastes, you might try adding things like banners, 'dressed' armor stands [something to do with all the junk armor one seems to acquire (dyeing leather optional)], items in frames [which could serve as a sort of trophy hall with signs beneath as plaques or naming the items] or pot plants [plants in flower pots]
Each of these options can be a bit laggy if one uses vary large numbers of 'things'; if this is a factor with your computer/server, plants in dirt blocks avoids the issue.

You could try using blocks such as cracked stone bricks, cobblestone, and mossy cobblestone to “break up” the look of it. I haven’t really experimented with it yet, not being a good builder myself, but I’m pretty sure it will look good.

Just figured out that when I'd turn 8 years old, the 23th of November 2011, my parents could have offered me Minecraft as a birthday gift. Sigh...
Fun but frustrating platformer. Saves me of boredom when I don't feel like playing Minecraft. Knowledge of 8-bit old-school videogames is optional tho'.

Great idea, and perhaps OP could also change the wood in the second photo from oak to perhaps birch (to contrast the suggested spruce). But it has to be done in a way that it still retains its medieval look.

Get rid of cobblestone. Need torch holders? Use andesitum. Below (and around) any wood, put stone bricks. Meaning you dig the holes, then you wrap in in stone bricks and then you put down wooden floors. Do it professionally. Floors…made them from birch wood. Do you want wooden walls? Probably regular oak. Ceilings? Spruce. You can swap floor and ceiling wood type, if you want or just somewhere. You can also do some "walking parts" of the floor in different type of wood (the ceiling type). But always: dirt/stone or whatever remains unexcavated, then stone bricks and then wood.
As light source, torches. And I'd go only for those. In 1.14, you can add lanterns.
Pillars: made them from stone bricks, without wooden enclosure.
Entrance: make it look humble. Just double ferrum doors, button on top form the outside, pressure plates from within, in the same wood type as floor will be. Don't look too big on the outside, keep it all inside. So when anyone comes, it will be like "meh", but then he comes inside, and it will be impressive.
Great idea, and I have something to add to it - maybe you could have a waterfall going down in front of the entrance to the base so it maintains that 'secret base' feel to it.

Enhance the outside entrance with some stairs and pillars
Add support pillars inside every now and then.
Could be a mix of walls, fences, maybe stone bricks and or stairs and slabs, try to experiment and see what works best.
If youre adding wood try experimenting by mixing planks and logs, but dont overdo it.
Redstone lamps could have some trap doors on them for added depth or something. Maybe replace them entirely with lanterns when the new patch comes

I don't like giving too much info about the seeds i share. I feel like its better to let others explore and find out the chest contents,dungeon places and biomes. If someone is giving me a gift i would rather not know what it is until i open it for my self.
I think it's fine the way it is. It's kind of fun for other people to go explore some tiny little hut or entrance into the ground and then find something huge inside. One of my favorites was this mid-sized unassuming wood cottage someone had built. But then you go down to the basement and it looks like the Halls of Khazad-dûm.
I was making the entrance for my underground base but I can't really look at it without thinking it needs something more. Maybe more wood? Details?

Personally I like more vegetation and natural things like rocks, etc. You could add some vines or boulders outside, or grass.
