I think Jungle wood planks look nice, they add just a bit of color without looking too exotic.
Oak planks fit in with almost everything but if the walls, ceiling and stairs are oak I think it would be too much of the same thing.
Acacia has a nice color but doesn't look very medieval.
I think Dark Oak planks would be too dark and heavy looking, but like the birch if offset by a nice carpet it might be nice.
(If you want to stick to the medieval theme I don't know how common carpets would have been, particularly bright colors like most of the Minecraft carpets. Maybe red would work, otherwise they seem more 1960's style. )
Spruce is sorta borderline dark, it might work.
I've never been fond of birch, but it might be OK with 2/3 covered with carpet.
Spruce wood plank floor, with a few carpets in some area (dont cover the entire thing), + a little bit of cobblestone perhaps around the fireplace, kitchen, or storage room for wood logs, hay, or whatever.

I don't like giving too much info about the seeds i share. I feel like its better to let others explore and find out the chest contents,dungeon places and biomes. If someone is giving me a gift i would rather not know what it is until i open it for my self.
