Usually wood because it's relativity easy to come by, I've never spawned in a desert in survival so I have never needed to make a sandstone house.
I've experimented with stone but I find it ugly in most cases, much preferring a humble shack of wood with underground complex's.
Usually cobblestone and its derivatives. I've avoided wood ever since a nasty fire-related incident, 'though I sometimes still use it for paneling or detailing work.
Unless I'm in an open-air treehouse, I inevitably make the walls out of stone brick. The floors are something colorful, usually dyed wool.
My latest house has a half-slab ceiling (sandstone for looks), which has the benefits of blocking mob spawning and allowing openable chests up to the ceiling.
Planks, logs, cobble, glass. I might use wool or sandstone or stone brick for a few ornamental things like carpets and tiled floors, but other than that just the four basic materials.

Normally, I'll start with dirt and cobble. Once I have the right materials, and enough of them, I like to use Obsidian, Mossy Cobble, Netherrack, Redstone Blocks, glowstone, and maybe spruce wood.
