Today in my 3 day old minecraft sps world I was running from zombies because of low health. While running I found a weird indention in the land with water falling in it, so I escaped to there. I found a STRONGHOLD down there! I was so excited that I found my first legitimate stronghold without eyes of ender!
Has this happened to anyone else? Just randomly running into a stronghold without trying?
In my world I found for the first time a stronghold while I was branch mining and I feel very grateful. Finding them with the eyes of ender is a pain in the ass.
I found my first stronghold exposed in a ravine while caving; you can even see it from the surface (seed -123775873255737467 at -815, 535 in 1.6.4 or earlier); a library is exposed and the portal is straight across the next room; a dungeon is also connected to the library. Not only that, I found my second stronghold, still in the same world, the same way (unexposed).
Also, when I first went into the portal and then killed the Ender Dragon (on my first try), with all of the prerequisite achievements, I thought that I didn't get the achievements for them because I didn't use Eyes of Ender to find it ("The End?" has an Eye of Ender in its icon, so I thought you got the achievement when you located it with an Eye, not by entering it); it turns out it was a bug that wasn't fixed until 1.6, although you could then get them by just going back the the End without killing the Ender Dragon again.
It happened to me once. Or actually, my brother. He was doing the thing that he does as a noob, walking around on peaceful with 2 fps, when he came upon a cave. He was like, Oh, a cave, and he went in and there was a stronghold. Ha.

Me and my brother on LAN once, we spawn in a plains biome and we can't find caves anywhere. So we go off and I find a Jungle Temple. Knowing he's never found one I get him over to it. He does all the stuff and decides to look for caves in the jungle, which is probably as likely to find as in a plains while I start harvesting the Mossy Cobble. Lo and behold 2 minutes later he says he found a ravine, and asks what kind of monster spawner is built with Stone Brick instead of Cobble. I almost just get up and leave the room. He found his first stronghold ever, we don't even have iron.
First time I ever played minecraft I was playing on a friends server and put my house directly above one.. I didn't even know what it was when I found it... many SSP worlds later and I have never even been close to one.
I did find one without using ender eyes myself once. Picked a random spot away from my origin base and came across it while mining. If memory serves, I think they tend to be about 3km from original spawn point, so setting up a mine at the four points of the compass at that distance from your origin point might just net you a find. Cheers!

I happened to me very recently, but with a bit of a twist. While boating along the ocean and working my way towards an island, the xray glitch happened which is very common when boating because chunks are loading faster than when walking overland. Anyway, I saw a stronghold, it wasn't deliberate but I did see it and I couldn't unsee it. It happened on a vanilla server and no one else has found it.
when I 1st got mc I dug straight down about 500 blocks from spawn and found a stronghold and cause I didn't know anything about portals I jumped straight into the lava XD
I was checking out a ravine one time and when I went around the bend (like the top of the letter C) there the ravine had cut through a stronghold - the only time I ever found one by accident.
Funnily enough, the second stronghold I reached yesterday in my world had no eyes in the end portal frame. Mine also had the distinction of the floor level being level 6 on the map and the fact the portal was on its own - there were some small parts of a stronghold dotted about but not connected.
