Hey peeps, recently I have been contemplating on starting my own Minecraft, Vanilla SPS YouTube let's play series, but I want to know if people still enjoy those kinds of videos?
I understand my content, and my personality/presentation will also play a significant role in determining if the series would be exciting, but I'm more curious about the fact that it's vanilla and single player and if you find that idea interesting enough to bother watching?
Yes I know there are heaps of these series out there but many I find are old, and I haven't come across any new series' I want to bother watching myself.

Outside of the presonality of the presenter (verrrry much a YMMV issue) the only reason I've found for peeps watching 'let's plays' (which – as I understand the term – is a one take, uncut recording of a play session, generally with running commentary/voiceover) is to see how others do things.
Unless the episodes show some kind of task based focus (which may violate the spirit if not the letter of the let's-play genre), I don't see much point (beyond the aforementioned engaging personality argument); watching someone 'chop wood and carry water' simply doesn't seem interesting.

What if you don't have friends who play Minecraft?
This is the whole "[fill-in the-blank] friends," scenario. Given there are easily Millions of activities that are different-enough, the trick is always to find people who are close-enough - and not-Jerks enough - who enjoy-it often-enough.
Sure, in Any-other context(s), these people may-Not be describable-as friends (now in the worse ones, they won't-pass the "non-Jerks" test, but the other points are fungible /flexible [see? more than 1 word meaning close-to the same thing]). Indeed, some people "look-'down'" on Gamers and /or Games, "'because' of" this - their desire to be-Jerks, again - Jerks-about Others-Gaming.(.!)
What do you think 'Net is for? Other than catching people comm'g. on Forums, of course (the pre-"Pagers" & "'social' 'media'").

As you mentioned there are heaps of ssp letsplays out there, some vanilla, some modded... so starting up with 4 episodes showing you punching wood and trying to build a wooden house for 40 minutes isnt the most exciting thing in the world.
Id say:
* Have a main goal and stick to it
* Make a few episodes here and there with "side goals" when you reach a specific objective (like making a zombie grinder if you find a dungeon)
* Play with a friend, or multiple ones, switch cameras between their point of view. I remember watching a bunch of guys trying to kill the enderdragon in vanila survival ages ago and it was a complete mess, but also funny and engaging
* Eddit, eddit, and eddit. Nobody wants to watch the boring bits, specially if you have nothing interesting to talk about while youre cutting trees and strip mining for more stone /diamonds. Speed them up ,or cut them off.
* Once your main goal has been reached make a grand finale episode, and start a season 2. Now with new features, updates or goals.
* Mix it up a little with showcasing maps, playing with a buddy , showing off mods, texture packs, paying server minigames or playing with some sort of challenge (hardcore is interesting, island survival, sky maps etc)
Which shows the effort is much more than it seems, and we should appreciate the people who do this more.

Personally, I enjoy watching youtubers collab with friends on multiplayer. Because people are crazy, and that crazyness is exciting to watch.
