I personally like hardcore because it is more challenging.
I wouldn't really say it's more challenging. It just adds a much higher penalty for death. For a random self inflicted challenge, hardcore is alright, but I always stick to survival.

Well, it does actually add more difficulty to the game.
Survival, as if I try to go hardcore, I know I'll die after I collect monstrous amounts of resources, including diamonds, making me never want to play again. Survival on hard is relatively the same thing, just no penalty when you die.
Survival, definitely. With cheats, and the "keepInventory" game rule set to true, and with "mobGriefing" set to false, and, um, usually but not always on peaceful...
So, basically, I like for MineCraft to maybe have a little excitement now and then but mostly be relaxing to play. I like some excitement when I'm out hunting mobs, but that doesn't take much for me because I'm kind of a wuss...
I can understand why people who like thrills and challenge would enjoy playing on hardcore, though. It's just way too instense for me in this game.
