Me and my friend got bored with minecraft, and what we did was that we came up with challenges. All diamond tools + small house + challenge items. For example, we had a challenge called "Sweet Tooth." In it, you had to get 5 pumpkin pie and 1 cake along with tools. We did races together and against each other, but if you prefer singleplayer you could always do this sorts of challenges against the clock, perhaps enchanted tools + armor + 10x10 house + challenge items in less than 2 hours or something? This sort of stuff kept our imaginations wild and our playtime on minecraft remained diverse and enjoyable.
Minecraft is one of the only games I have played for as many years as I have and still not bored. Granted I have not played in a few weeks since I have been playing RDR2 which I FINALLY beat last night. I've been looking forward to getting back on Minecraft.
My suggestion is to think big. Come up with some cool ideas and build it. Maybe make an entire town or village. Make a massive fighting arena. Make an amusement park or zoo.

It's called the City Construction Challenge. https://www.minecraftforum.net/forums/minecraft-java-edition/survival-mode/297932-the-city-construction-challenge . It's a bit dated but it's still pretty fun to do, and it takes a lot of time. Try to play on a strict level to make it more fulfilling, or do whatever you want. I played going the hardcore route and got to stage 3. I'm waiting for the next minecraft update so I can start new and with a fresh update. I hope you like it!

I recommend you using Faithful for your world.
And if you can, create farms, is funny.
