I am currently finding mine craft to be a tad bit repetitive and am wanting some new challenges to attempt. I am not talking about the rudimentary make diamond armor or a cobblestone generator but something more complex. Give me challenges that are worth accomplishing, something doable, not randomly or insanely large or crazy.
My main ambition is to eventually create a thriving town with villagers and whatnot. I would even be willing to play with others as long as its strictly vanilla.
Example Challenge: Build aBlacksmith with working automatic furnace, anvil station, blacksmith personnel, lore, small blacksmith home attatched to the main shop, and a unique cobblestone generator and fireplace all in a medieval/steam punk style underground connected to your mines.
Build a tannery with a automatic cow farm, items frames to "hang" the leather on, a storage room full of leather, and, well, there's not that much you can make in a tannery

You should really read these books if you're a fan of, well, reading.

... I might actually do that.
Also the no crafting table challenge.
