Whenever I play at home, I play on easy, unless I want to build something out of Redstone. Then I go to peaceful. However, only one computer at my school can run Minecraft (which, I'm proud to say, is due to my technical knowledge of how the .minecraft works), so we kiddies take turns every ten minutes on hard mode, so that you are more likely to die and let the next person on early. It's only fair.
Most of the time whenever Im building large structures are want to explore a cave without annoyances then peaceful. Rest of the time I'm playing easy or normal
I now do bloq's and my challenge, so I play on hardcore. I used to play on easy and turn it on peaceful when I was gonna die xD now I go fighting in the night on hardcore. At that time I never wore armor, never realized how good it was to have some.
I really enjoy your hardcore challenge. However, can't do it until I'm 100% comfortable in Normal.

I play on hardcore. There is no other mode for me! If you die, you die. Just like real life. Hardcore is the best mode. Makes every encounter worthwhile. You never think, "oh well, if he kills me I'll respawn" Every mob encounter is a fight to the (virtual) death!

I only play on Peaceful when on a superflat world (I build with pistons and redstone on superflat).
