I hardly ever go cave exploring now, so I practically always have peaceful on. I'm also not a wimp, I just enjoy building more and don't want to have to bother with monsters at night.
I play Easy. I like having the small challenges of skeletons and creepers, and they scare me just as badly in caves on Hard. Not only that, hunger leaves you at a disadvantage instead of killing you [who ever heard of someone dying of starvation after two or three day's work?].
It also allows me to build in relative safety, and I plan my outdoor excursions and builds based on how much daylight I have left.
If you're hauling around tools and using them, you'll die of hunger if you don't eat for days.
Sure you can surivive longer then that, but you doing hard labor will drain your bodies energy.
Just Hard or Hardcore even if I build something whit redstone because I like challenges, overpowered skeleton, stress, eating non-stop, and I never sleep because if you pass the night, it become to easy.
I played on normal or peaceful a lot until I realized I was getting a little bored with the game. I would also seed switch from creative to survival sometimes and pimp myself out before setting out in a survival game.
Then I saw a short video of someone trying to survive hardcore and he was all kinds of freaked out and the only thing through my head was 'I could do better than that blowhard, and I am so not pro'.
So I did.
Right now I'm on a hardcore world, I don't have any idea how long I've survived, but I've tamed half of a ravine system, revamped an npc world, and am trying to decide how I'm going to harness this zombie spawner I found to make an xp grinder with water only. I have a tunnel system between major waypoints and have a rainbow sheep farm
Paintings. I need more paintings in my grrr world. Yay!
When I build: Peacful, on survival I play normal difficulty as I hate the idea of zombies breaking dOwn doors
I fully agree, on a side note I hate hardcore beause the idea of losing you save after days of hard work makes me shudder
That reminds me of when I first updated to 1.2 I was horrified with the new AI because I knew that my progress would in hardcore be gone within 10 minutes. Running to my house in the dead of night, skeleton says "Nope" and I die

For fear of that exact thing, I create backups. "Noooooo my gaaaaaaame!"
Depends which map I am on. If I'm on a building map, I usually have it on peaceful. At least, until I can get some worthy defenses up. Alternatively, I may get the careful creeper mod (so creepers either don't explode or don't destroy the landscape). If I'm playing on a combat/roleplay/survival map I usually play on normal.
When I started minecraft I played on easy and normal, but now I consider myself quite the minecrafter and playon hard or hardcore. Only die when I'm just being stupid.

Start playing on 'easy' or 'normal' during the day phase, with a night phase every so often? That might help transition!
