I've been trying to hunt endermen for awhile now, but I've been having trouble.
First of all, I've got lots of armor and an enchanted diamond sword, so the melee combat itself isn't the problem.
The problem is that whenever I hit an endermen, it flees (i.e. teleports away). Since It's easier to hunt at night, I can't exactly pursue it across mob-infested terrain.
Is there anyway to make an enderman stick around longer, or damage it more quickly?
I haven't accessed the End, by the way, so I can't farm Ender Pearls there, but is there a reliable way to farm them in the overworld?
EDIT: I've figured out the problem: when hunting Endermen, avoid using Fire Aspect on your sword. With the constant fire damage, the enderman will end up fleeing, but without this damage the enderman will stick around and let itself get killed.
Of course, the lack of extra damage makes the endermen significantly more dangerous; be sure not to provoke more than one at once, otherwise a pair can easily overpower a player, even with full iron armor.
Try looking underground in Abandoned Mine Shafts. They are small sometimes. You can find Enderman in them. I did once. Although I ignored it due to lack of interest to fight it.

If it's day, don't even bother. I would actually suggest provoking an enderman by staring at it and getting it to come to you. Providing you've got your back to a wall, it should be fairly easy to kill it once it's been aggroed.
I hit them once, and i run under tree or whatever 2 block hight and then i kill him. Or if you wear armor, just hit him on legs, he teleports only when you are looking to his face. Pumpkin is good idea but the vision... you can modify it.
What are the enchantments on your sword? Fire aspect is good; ensuring it continues to take damage after it teleports away.
I have fire aspect II and knockback II (and smite IV, but that's irrelevant). I'm starting to wonder if Fire Aspect is actually a bad thing to have for this purpose; whenever I attack the enderman, it teleports multiple times as a result of taking damage constantly.
Tonight I'l use a sword without Fire Aspect and report the results.

Yeah, don't listen to them. Fire aspect is a bad idea when hunting endermen. It will make them constantly teleport away and, as TheHoneyPot said, you could lose them.
Just like what Prince_Deity and TheHoneyPot said, fire aspect is bad unless you are on a map like skyblock and they have no where to teleport, then it would be effective. You also want to make sure you hit their lower legs and arms because they have a lesser chance of teleporting away then if you would hit their chest or head.

Simple answer is: Don't worry about killing Endermen. I opened up the End without killing one single Enderman. Villager priests sell Eyes of Ender cheap. It took me one afternoon to buy 15 off of this one priest. It was easy to get together the emeralds.
What I did was edit the pumpkin GUI so that the cut out eyes where gone and it was like a normal helmet, of course thats kinda extreme, considering you could just go to third person mode. I used a sharpness III sword but any sharpness will do. Try to avoid fire aspect and rain. Bows never work as for the enders will teleport away before you get a hit off. Hope this helps you in you enderman killing and getting those pearls.

Hit them in the feet, they won't teleport (Fire aspect aside). If he is chasing you, try to get one level under him, so it's easier to target the feet.
You could use some cover because hes taller then you, he wont fit everywhere. Just make a little tent type thing and make sure he can't get in but you can.
