I have over 10 stacks of rotten flesh and the only thing I think it can be used for is food. I dont need it for food though, because I have about 20 sacks of bread, melon, apples, and porkchops. Is there anything to do with rotten flesh, and if not in vanilla is there a mod where it might be useful?

Ten stacks? That's nothing. I've thrown out over a double-chest full of the stuff (54 stacks), and now it's nearing full-up again. I have only three dogs, and they just sit in my side yard so they aren't getting injured any time soon. I have absolutely no use for the stuff at all...
Thaumcraft uses it for research and magical aspects. IC2 does have the canning machine which removes the poison effect but I believe there is still a negative, such as something to do with hunger, I'm a little fuzzy at the moment though as I haven't actually used the canning machine.
I eat it for fun. Adds a bit more of a difficulty aspect to the game.

I eat it, it's actually a decent food source and much easier to get than steak etc (plus if you don't cook up your beef, you can trade it for emeralds :D)
Rotten flesh is the only thing I have started throwing into my garbage disposal thing, with a whole chest full of it I'm all set for eternity and a half even if I manage to find a wolf in my world.
Like most people have pointed out, it's great to feed to your dogs. If not that, it can be an emergency food source, say if you run out when you're lost in a cave or something.
Rotten Flesh, now that 1.6 has been released, is even bad as a last-resort food. It restored 2 hunger bars with 0.8 saturation and an 80% chance of hunger, meaning that if you need to heal then you will probably run through 10-12 rotten flesh doing so.
Like other people said, its good for dog food, There's also a mod called VanillaPlus that lets you smelt it into Cooked Flesh, and crafted with sees into Seasoned Flesh.

I get it. It can be used for dog food, but my dogs always disappear since for some reason they cant keep up with me, so I wont be doing that.
I like redstone, so that's not a bad idea.
