Bring food. Everything else is useless with out that stuff unless you are caving in peaceful. If peaceful, don't take armor, swords, bows, and really anything that is aggressive so you can take as much stuff as possible.

I still use armor on peaceful because you can still fall in lava.
I mine unarmored because mobs aren't a threat to me. Maybe I'm overconfident, but it works for me.

And I also always bring plenty of spare picks and swords.
I also always light up the caves as I go, and carry some extra sticks in case I run out of torches. Lighting caves serves as a great way to remind you that you've already been in that area.
And most importantly, be aware of spots that a mob could potentially ambush you from. If you keep a constant watch all around you, Creepers shouldn't be a problem.
If you come up to a four-way intersection, wall off two of the paths, and explore one route at a time. That'll keep you from getting turned around every which way when you go back to the intersection and prevent mobs from ambushing you.

On the topic of armor, I usually deck myself out in full Iron armor, enchanted if possible, before entering the Nether. I need all the protection I can get from those Blazes.
You could block off the little caves and holes inside the cave after you've gathered all the resources in them so you don't check there again and save time.
Light up upper passageways as you find them. Sure the good stuff is down below, but this will keep mobs from dropping on your head. A mob can drop down 10 blocks a whole lot faster than they can go up 10 blocks.
Caving or spelunking is a good way to find ores fast. you will find lots of coal and iron, but minerals like gold and diamonds are rarer.
On a well prepared caving trip you should bring 1 - 2 swords, 2 - 3 iron picks, a shovel a bucket of water one stack of torches (you can make more later with the coal you get) a stack of wood, a few (minecraft) days worth of food, a stack of dirt or blocks to pillar up with, iron armor (you generally dont bring much better because if you fall in lave you dont lose valuable armor).
optional gear to make it easer (not that it needs to be easer) fire resistance potion helps for those "oops" times, night vision potion saves torches, invisable potions really helps with cave spiders ;), feather falling boots.
thats what I can think of off the top of my head. Its just my two cents. I hope it helps!

Make a mainroom with chests, where you can put the collected ores in
make blocks of iron/gold, if you have more then one stack of them
