So, I haven't played minecraft in a long time, so I've forgotten alot. I've gotten up to nearly midgame I guess you could say, not sure. I have a diamond sword, diamond pickaxe, iron armour, iron tools and a nether portal. So, my base is not really a base at the moment, It's just a staircase that leads down to a tiny "entrance room" that isn't complete, and on the left wall there's a door that leads into a 5x5 room with an enchanting table and 15 bookshelves. I haven't enchanted anything yet, since I have no xp. No xp farm yet. Also, I used amidst to go to the closest stronghold. I quit inside it, because I was going afk. What do I do now though? Any goals? I mean, obviously I'll want to make storage and a farm in my base, but after that, what do I build in it? Also, since I've found a stronghold, should I just get all diamond gear and defeat the dragon? Or enchant it first? In that case I'd need an xp farm. So, any designs?

GENERATION 11: The first time you see this, copy it into your sig on any forum and add 1 to the generation. Social experiment.
You don't have to do everything that has an intrinsic value. There are many ways of playing this game; as a medieval king, a nomad, industrial, wilderness survival, etc.
Some ways might not be your favorite way of playing, but like in real life, it's worth a try if it mixes up your activities.
My best advice would be to think differently about your world or try a different approach... from the sounds of it, right now you're just gathering items that have value and progressing- not doing things as means to an end, even if they are small.
As for individual activities, you could try a challenge, play an adventure map (something I haven't done in a while), try out some mods or the various world presets and styles, play on a multiplayer server. Even something you'd not think of or normally bother to do, such as use a new texture pack could make things all the better.
TL;DR reply: explore all the cool things you can do in the Nether.
More seriously, vanilla MC is designed as a sandbox; there are no 'goals' as such. [There are things that – once one accomplishes them – open up new possibilities (eg. building a Nether portal opens access to the Nether, building a chicken ranch provides a secure and reliable source of eggs/chicken/feathers)].
If you try to play vanilla MC as though it were a conventional video game (eg. Mario, Zork, etc.) you may well be frustrated by the [intentional] lack of a defined goal series/tree/web.
If you want an experience nearer such video games MC's adventure mode/ adventure maps may provide it. [Try looking around in Maps ]

WARNING: I have an extemely "grindy" playstyle; YMMV — if this doesn't seem fun to you, mine what you can from it & bin the rest.
One approach that has kept my motivation withstanding is to think of your world as the setting for a story that you write. Use your adventuring, building, exploring, and discovering as catalysts in a narrative tailored to your interests and curiosity. In a game that has a marketed linear approach, Minecraft is far from linear. It can offer you creative ideas and a platform for storytelling! I can say with certainty that I probably would not have kept the same world for five years had I not chosen to write a story around it. Today, the story is half the experience for me, whereas the actual playtime comprises only a small percentage of my time devoted to this game.
Don't get me wrong, this approach may not work for you. But it may give you a fresh perspective and allow you to discover new ideas both within the game and about yourself. I can attest to that.
