I think it's the replay-ability. I have played for two years this summer and I have never gotten bored of the game. Sure, I've stopped playing singleplayer at times, the same with multiplayer. But never both at once. I also, like most people, like the freedom and lack of invisible walls, you can only do so much, like not kill X npc since they will be valuable later. Even if you do get bored, the community is waiting with texture packs and mods on a silver platter for you to spice up your game.
There is very little in life you truly have control over. Your fate is not predetermined, of course, but is dependent on lots of factors, most of which you do not control. In Minecraft, you have complete control over your fate. This is why I play. Plus it's fun.
I like Minecraft because it allows me to meet people I would have never met otherwise. So, while I'm chatting to people, I'm able to explore this vast sandbox world and do WHATEVER I want to. It allows me to be creative, something a lot of games don't let you do. I have full control of what I do. I'm not following a story/plot line. I love that Minecraft allows me to do what I want.
First of all, it's relaxing. I play on peaceful mode, so monsters aren't an issue and I recover from being hurt fairly quickly. I use the "Harder Peaceful" mod, though, so I do still need food. However, with plenty of farms plus a fishing pole, food is never hard to get.
It's a creative outlet. I have a need to create and MineCraft gives me a nice outlet for that alongside other outlets (such as making Flash games).
MineCraft rewards patience. I'm not very quick, my reflexes are really bad, I can't seem to get good at strategy games, and I'm often too tired to do well at a puzzle game. MineCraft, however, will reward me for taking the time to do something simple for a long time. I can spend an hour digging in my column mine and come up with some resources. I don't have to react quickly (except maybe to digging into a lava pool, I suppose), I don't have to outsmart anyone, I don't even have to figure out a difficult problem. I just have to dig. Some people might find it boring or tedious, but I find spending time digging (mostly with stone tools, even) to be very rewarding.
MineCraft gives me a world to play in without demanding anything of me. It's not even a game where objectives are optional or where there are a choice of them; the objectives and whether I follow any given one at any given time are all up to me. I can have multiple projects going on and the game won't bother me about them when I just want to go fishing.
MineCraft is an amazing mod platform. I have a lot of mods and they make the game much more rich and deep than it would be otherwise. I have a variety of technology mods which offer me lots of possibilities which vanilla redstone could never do (for example, there is no automated crafting table in the vanilla game) and that makes me very happy. I also use ChocoCraft, which adds the chocobos from Final Fantasy to the game; Chocobos are my favorite fictional creature and being able to tame, breed, and ride them is amazing for me.
MineCraft is always there to cheer me up. I get really moody sometimes and it's nice to have a game which almost always manages to cheer me up. Whether it's the satisying feeling of getting lots of resources out of my mine or just being around my chocobos, it's a great way for me to feel better when I'm upset.
MineCraft gives me things to play with and doesn't make demands about what I do with them. With mods, it's especially nice. It's not like "You've tamed a chocobo! You have to put a pack bag on this one because the designer doesn't want you to ride one yet. Do as you're told. ", it's more like "You've tamed a chocobo! It's yours to play with however you want to. " That is just amazing for me. I guess I like non-linear experiences in games. Sometimes, I do want to have a more directed experience, but I often really like being able to make my own decisions about what goals (if any) to pursue and when to do so.
Those are the things that I could think of.

I think this everything is fun. the mod, the servers ,the maps, and more. the game is one of my favorite game and i care so much about it. minecraft my favorite game can't get better. thank you mojand for creating this game ,and all the people how play this make it better. thank you
Because of the potential and freedom, particularly with mods and the more complicated things. The way I see it, Minecraft is whatever game you want it to be, you just need the right mod for it, or to write one yourself.
I have a Realm set up with a few close friends and I really enjoy seeing/interacting with their creations, and the politics in-game can be quite amusing as well. I hardly ever play singleplayer now as I prefer playing online on our Realm, it feels like an "established" world with it's own history.
