To find my diamonds, I prefer to burglarize other players' homes and burn them down afterwards. If the player is inside of their home, I kill them before I burn their house, or, even better, burn it while the player is still alive inside. If the player threatens to get me banned for a breach of server rules, I bring a bucket of lava to their doorstep (If it still exists, of course) and force them to watch as I incinerate their items one by one. Then I log off, never to visit the server again. If their home cannot be burned down, I make the necessary tool out of their own diamonds and try to do as much damage as I can. It's especially fun to patronize them over text chat while doing this, especially while using a vulgar or immature nickname. If you don't play SMP, then you might want to ask the folks on the recieving end of all this. I'm sure they have plenty to tell you; too bad they don't have any results to show.
I go caving, it works pretty well. If I find no good caves on the surface, I branch mine. Sometimes when I feel like a lot of action I blow things up. All these ways I find diamonds petty well, except sometimes accidentally blowing up diamonds an gold is a big loss for me.

Caving and branch mining. Depends on what I feel like doing at the moment. On my SMP server, I went exploring into a random cave yesterday with an abandoned mineshaft all the way down at 11th level. I was in it for about 3 hours, give or take. I was using an Eff 4 Unbreaking 3 Fortune 3 pick, and when I was done, I had found around 75 diamonds in total. I kid you not. Luckiest I've ever gotten.
I usually take 2 diamond picks. One with efficiency on it, and one with silk touch. I mine in 3x3 strips at exactly level 11. I then take all of my ores to my base and fortune pick all of the proceeds. This keeps my fortune picks safe from lava, etc. It's the safest method i've found (and the most boutiful)
I dig down so feet pos=11 and then I do 2x2 tunnel branches with 2 blocks in between each tunnel. I listen to music or space out or whatever while I dig. It works pretty well and is kind of relaxing in a way. Also, fortune III O.O
I like to dig out gigantic rooms, often for the purpose of farms. You never know when your server admin might decide to install a solar apocalypse plugin, which would render surface wood useless. I remember one time when this actually did happen, and I ended up being one of the richest players on said server because I was able to supply massive amounts of food, wood, wheat, sugar canes, and all that stuff. Did I mention giant underground networks of railways help too? It's pretty fun when you can just send a minecart with a chest to the recipient's nearest station. Too bad the server had to die, it was fun while it lasted.

I branch mine. I have one at layer 12 then another at layer 8. I dig 3 blocks high, 2 blocks wide with 2 blocks of space between tunnels.
Just a tip, 3 block spaces in between tunnels is the best, as most veins will extent 2 blocks wide, so you would have a .001% chance of missing any ores in that 1 block space by leaving 3 blocks in between tunnels.

Exploiting testificate trades might be a good idea if you have a bunch of villagers in say, an apartment building, and you can easily acquire heaps of emeralds with wheat or something.
