I just finished clear cutting and leveling out a big area in preparation for building some farms, I got it all bordered off and well lit to prevent all but enderman from spawning within this area, the area is quite large. All of the ground is grass, clear of weeds and flowers and torches every 5 blocks.
So far it's been working fine to prevent mobs from appearing and even endermen have only spawned once that I know of but he might have spawned elsewhere and teleported in.
My problem is the animals that are spawning thru out this area, I don't have animals spawning is several of my main areas but they do spawn in this new large area, is there a way to prevent them from spawning here?

Endermen aren't on a special list of their own, they spawn just like hostiles do. If you are preventing creepers, you are preventing endermen as well. Any you see simply spawned somewhere else and teleported in.
For passive mobs, they spawn in light levels of 9 or better and on grass, so to avoid this you either need to take away the grass (cover it up with slab, stair, glass, leaves, or some other unspawnable block) or cover with liquid (water or lava). This isn't a very appealing choice for a builder, so you can instead round up 10 individuals and either incorporate them into your build or bury them underground where you won't see/hear them normally (you can't hear mobs that are more than 16 blocks away other than ghasts); passive mobs don't despawn (but can die from various means), and the cap applies to all loaded chunks (including spawn chunks if you're really far away from them.)
If there are at least 10 animals close to the grass area, the game won't spawn any more animals. Go into the middle of the field and dig a hole. Use eggs to spawn a bunch of chickens and bury them forever.
Whenever you're by the grass area, the passive mob cap will be filled by those chickens, and you won't get any new animal spawns.

Just go ahead and start your farm and fill the entire area with wheat. They won't spawn on wheat or dirt, so once you have it set up, you'll be fine. If you still have some grass areas between fields, make 'em into paths or what have you.
