One thing I noticed, an it's bugging me, is when I take a bucket of water from the ocean (or any large body of water), the surface of the water "breaks" or messes up. In the past, since the surrounding water blocks are all Water Springs, it would simply re-fill the gap and the surface would flatten/smooth back out.
Define in the past. Its been like this for quite a while now. If you take from 1 deep water your probably OK. I suggest you check the wiki for specifics.
Just like what everyone else is saying: take it from the shore instead of from the middle of the ocean. The only way to fix the "broken water" spot you've produced is to somehow get a solid block one under the surface and then remove that block.
You can also try to take a bucket of water from an unlimited source and go UNDER the broken water to put it back the way it was. I just did that and I didn't have to put any solid blocks to stop the current. ALL FIXED

Is this a bug or did water mechanics change?
Generally you just take from the shallow end and you'll be fine.
Water sources only replicate if in a one block deep pool. Taking from a deeper pool removes the source and turns it into a block of flowing water.
To fix messed up water, build a dirt platform just under the surface. Or just pillar up from the bottom at the center of the disturbed water.
