Sprinting so they're being continuously knocked back as you hit them so they can't do as much damage to you.
However I always keep 3 splash potion of damage II in my hotbar, that is the absolute best way and is only resisted if the armor has the protection enchantment.
In the plains situation, jumping to land critical hits is the best thing to do. Sprinting to knock them back works helps gain an upper hand as well.
In terms of demolishing players, I think potions are the best way to go. Surprise them with a splash poison II potion, followed by a few splash damage II potions, and then they're pretty much gone and you can finish them with your sword. Potions are also great for boosting your damage (strength potion) or if you need a quick getaway (swiftness potion).

normally i destroy people at pvp so what i did is get a razer gaming mouse instead of the one button mac mouse it came with and double click which blocks and hits so they do half as much or even less damage and also splash damage 2 and poison 2 potions and spam clicking works great, i beat a guy unarmed when he had a diamond sword and diamond armor easy cuz i avoid attacks, always sprint and jump at them and avoid their hits at all costs!
Getting a preemptive strike is usually a good idea. Stealth tactics at the beginning will work better than the actual battle (which is decided by starting health, armor, lag, and skill).

Did something happen to you in your childhood to give you this unreasonable fear of rutabaga?
You are in a plains biome facing off with your nemesis. You both have full iron equiped, 1 iron sword, and a stack of melons.
Statistically, you're equal. What gives you the strategic advantage?
Also, in general what are the best ways to demolish players? I've lost to a no armor player with a diamond sword while I had full iron armor equiped.

Is it still possible to stack potions once more?

Fire was crazy nerfed. It deals barely 4 hearts of damage.
