Do let us know what you find out. The central portal should always take you back to your last bed or, failing that, back to the world spawn. It won't necessarily take you back to the stronghold unless you slept in a bed there to set your respawn point.

The end gateway you get after defeating the dragon will spawn a matching gateway that you can use to go back and forth between the two. If instead you use one of the randomly generated outer island gateways they will take you back to the obsidian platform where you spawn when entering the end from the overworld.

Better to get mending books, then you won't need more Elytra for repairs. When I went in search of the elusive Elytra I brought an Unbreaking III book and a Mending book as well as an Anvil, so that I could apply the enchants immediately and start flying (I also brought a bunch of rockets).
I have since found another, which is in an item frame on the wall of my bedroom (along with a dragon head and dragon egg).
The dragon head is redstone powered and animated. LOL, gotta love that they did that.
sionwicker I think your biggest issue is that your viewpoint on the other dimensions doesn't match the developers. The dimensions are more side areas where resources specific to that dimension can be found and new challenges to be overcome to get those resources.
You want a fully fleshed out content full dimension, but that's not just going to happen in one update with Mojang's small team. That's not to say that over time these dimensions will not get more diverse content, but if you can't wait perhaps there is a mod for that as others have suggested.

However I certainly do remember when the Nether was first implemented, and even back then it had more block types, mob encounters (and dangerous ones - Ghasts) and variation in its terrain than the End does now.
The biggest problem with the End for me is the monotony of the scenery and the lack of danger. Even before M$, they had over forty employees. Not exactly a small team anymore. Well, maybe compared to the Windows team lol, but for an indy developer that's not that small.

And when you think about it the end cities add at least as much content to The End as the nether fortress do to that dimension. In my estimation the only big difference when comparing to the nether are it has a couple more mobs unique to the dimension. Perhaps it's the open expanse of the dimension that gives you an impression of emptiness?
The Nether had several blocks and terrain features to break up the sameness of the landscape when it was first introduced - it was mainly netherrack with patches of soul sand and gravel, large glowstone clusters on the ceiling, and large lavafalls and lava seas. Doesn't sound like a lot, but even a small amount of variation in terrain makes it much easier to look at. Having hostile mobs around to keep you on your toes also helps to keep the scenery from being the only thing for the player to think about.

Endermen are not always hostile. It's easy to avoid having to deal with a single hostile in the expanses of the End that exist between End Cities. In fact the End is less dangerous than either the Nether or the Overworld if you can keep out of the Void. I never said there was nothing left to do - there's plenty to do in Minecraft's endgame, my complaint is just that not much of it is in the End, and the End itself is sorely lacking in content compared to the other dimensions.

Yep, it took me back to my last bed this time. My bed must have been moved by another player the last time I came back. One thing I have noticed is that when you get close enough to a return portal, you see a purple beam going up out of it. This seems to be just the first time you come close though, because when I left a the return portal and came back, there was not another beam of light. The couple that I have found have been within a couple hundred blocks or so. One was on another nearby, but separate island.

When you sleep in that bed you actually end up inside the dragon head.

I didn't even realise that they flapped their mouths when you powered them. Mine now looks like the dragon version of a Big Mouth Billy Bass.
