On topic: Griefing in Minecraft has obviously became a game in itself for many people. Just take a look at team AVO or Icanhazgrief, they're making their own clients just so they have their laugh.
They have over 50 vids of them destroying, people have established forums dedicated to it. It might actually be a game

Griefing is just a reminder to people that they need to stop making public vanilla servers
1. They grief bukkit server too and can bypass plugins
2. Its not a "reminder" why can't people enjoy Vanilla minecraft.
3. They do it for fun not "reminding" people

I'm not taking sides, I'm just pointing out a flaw in your argument.
There are actually loads of people who do it, I know people who grief/hack just for the challenge, just to see out of interest if they have the tools to bring a server down, others do it for money, people create hack clients and sell them for $10 or even more.
It's the same as in real life. Idle minds think it's cool to spend their time destroying what other people create, instead of creating things themselves. Just ignore them, sooner or later they'll grow out of it.

It's not a sport, people sometimes do it because the admins on a server are jerks, or someone on a server is a jerk, or they just do it for fun. To some people it's like a hobby

Would you class hacking as a sport? Dog fighting? Domestic abuse? People work their way around the rules to do things they aren't supposed to in any number of activities. Usually, those things are frowned upon, if not outright illegal. Never are they referred to as sports.
For context: you could call gaming a sport, just like something like hockey or football - a thing that is done for fun. The violence and illegal moves in any of these are not sports in their own right, are they? Some people make their own rules or blatantly ignore the rules, true enough, but that doesn't in any way stand counter to my point.
