Build a castle or something huge. Last time I did some calculations I'd used 124 stacks of smooth stone for mine all smelted from mined cobble and that was only for about 75% of the exterior walls. I'm going to have to update my build thread soon with the final numbers from the walls and the start of the towers.
I keep all my cobblestone for building/crafting and smelting into smooth stone. Storage in chests is cheap and easy so why throw away a useful resource?
I get nervous when I have less than a double chest of cobblestone left. I smelt most of them to craft stone bricks for construction, but it is a good filler inside massive structures, and have uses as well, mostly foundations and roads.
Don't throw it away. I've thrown away stacks and stacks of cobble and ended up wanting to build something with it later.
Make a mob spawner, an underground base, use it for covering lava when you dont have a bucket, use it to make a storage room to put more chests full of cobble in!

What is this blasphamy, you can never have to much cobble stone. It is excellent for building function things you won't ever see (like the inside of a mob spawner for instance) and it can be smelted to make smooth stone which can be made into beautiful stone bricks.
1. Build lots of houses.
2. Build a lighthouse with a smooth stone/something else pattern, 3 thick stripes. put in a cycling/reciprocating redstone lamp thingy at the top.
3. Build a castle.
4. Build a road to a nearby biome, such as a desert for sandstone and glass.
5. Skybridge to said biome.
6. Nether skybridge
7. A giant statue to me.
8. Airport, with smooth stone runways.
9. Giant wall.
10. Giant sign reminding you that giant is spelled with a G, not a J (i seriously spelled it wrong 5 times while i was tyoing)
11. A giant sign answering the question "Need i go on?"

too much cobblestone? you only have one double chest full i have the usefull chest mod that has i think 1040 slots and mine is completely full from my cobblestone generator and ive used about half that amount already making a wall that seperates my biome i live in from the others(if you dont believe i use that much try to make a 7 block thick wall of stone bricks and stone slabsthat goes around your biome )

I had about 3-4 double chests fulls of cobble on one map when I was mining. That stuff is easy to get and if you have the fuel, can be smelted to smooth stone and made in to stone bricks.
I use it to make pathways in the Nether from portal to portal. I also like to use it to build a kind of hut around the portal to avoid being struck by fireballs the second I walk through. I use a lot of it mining through lava pools. I start my mining at level 5. You can smelt it into stone and build a castle. I have used it to make roads in the Overworld. Don't completely knock the wall thing. In my first world I built a huge wall and built up a village with four apartment complexes that spawned 5 iron golems. When you're first starting to play the monsters are kinda scary. Now I actively go out seeking them. I did build a wall around my colored sheep. I got tired of creepers blowing apart my gates and skeletons shooting me and my sheep while I was harvesting colored wool at night. It's a pain to try and round them up again and sort them into their pens. So I built a very functional and non-pretty cobblestone wall.

Then, when you're done, make a 50x50x4 mob grinder in the air.
That should use about 3 double chests of cobble.
