Travel more East/West directions. The fortress spawning algorithm tends to spawn them in lines that run North/South so if you were to travel North/South and if you're inbetween lines you would be lucky to even catch sight of one. But traveling East or West you will intersect these lines and be more likely to spot one.
If you want to cheat, chunkbase has a fortress finder using your seed.

Your first Nether Portal usually spawns you close to a fortress in the Nether.
That's just silly. Where you come out in the nether is determined by where you placed your portal in the overworld. So there are no guarantees at all you're going to be close to a nether fortress, just as likely the opposite.

It is true In One Case, On All The Console Versions because The nether is very small, smaller than some of the fortresses we have in PC, But I can't Find one on the newest snapshot
This is relatively easy, as many portals spawn you near, or even in Nether Forts. If you can't see one nearby, go straight in any direction, and you're bound to find one.

Exactly. However the referenced wiki quote is more anecdotal instead of factual. It gives one the impression that if you can't find a fortress near your portal you're a blind idiot.
Look for large areas in the nether and turn your render distance to max.
My Computer will crash, 32-bit 6 Chunks is what I run Standardly, and I've explored quite a bit of my nether, as much as I could get to and back from safely. But I do get The General Idea, I'll try up to 10 chunks
I think the nether portal's relative placement to a fortress is completely random, because the portal in the nether is relative to the portal in the overworld.

I just used chunkbase to find a nether fortress. I don't consider it to be that cheaty (I don't like to cheat generally) because even when you locate one you still need to travel to it, which isn't always easy (I didn't have any close to my nether portal). I had to build several bridges over lava. It was disappointing tho when the fortress I found had no nether wart farm T_T I MIGHT try to find my next one by actually searching, since I want to build a network of roads in the nether anyway.
I also used chunkbase to find a slime chunk. It's just an annoyance IMO to find your slime chunks based on chance or spending so much time underground. It feels like a waste of time. I like to spend my time building instead.

I've traveled 1,000+ blocks from my portal in all directions, except up or down of course, & I still haven't found one, I just want to kill a blaze, I want to do some brewing, but I can't find a fortress.

No, It Doesn't, you're just lucky, mine spawned me at the lava level

Either you're too high up or something else is going on. Fortresses are plentiful in the nether. They are all over the place.
Are you running other mods? If so, what mods?
No Mods, 16w02a vanilla snapshot, and I explore about 13 blocks above the lava on average, I just can't find one, it's weird
