I'll survey the landscape and either gather what I like from the nearby area or move along to a place which I find more interesting.
If I've gathered materials suitable to build with, usually a wooden box (always with a door), they will start me off for that night.
If I've spent more time on the move than gathering resources (often happen in deserts or stone fields and such), for that situation I'll dig a hole or block up a cave to bide my time.
Haha. I cut down a few dozen trees, then dig my mineshaft down to y10 and start branch mining. Until I get a storage room set up, I just clutter my chests around everywhere.

I remember making walls of sand 3 blocks high with about 5x5 space inside to move around. (I lived in a Beach biome) Horrible really. I need to destroy couple of sands to get out from there and put the sands again to close it. That was my first shelter in my first day in my first world.
Nowadays I just chop trees and make small wooden cubes with nice simple roof, until I start terraforming the nearby area to prepare for the main house.
Mine was just thrown together trash on a server i went on...first time i did legit survival in mc...made mostly of gravel exept the roof which i think may have been brick...

On my survival world (named Doo Wop...don't ask) my first-night shelter was a hole in the ground next to the mine I was digging. As soon as I had a nicer house built, I moved out of it and converted it into another mine tunnel.

My first ever shelter wasn't that different from what I do now, when I start a new world. It was a hole with the material from the excavation used to build a roof, and seal the entrance. My basic strategy has evolved, now I collect much more wood, and build a door excavating at least a one block hole in front of it to keep the zombies from braking it. I like to be able to look out. I mine for the first night, and the first few days. depending on how many torches I can make, and how much food I have. I prefer to live underground until I have at least iron armor, and diamond sword. That is when I decide if I like the area, or not. If I like the area, I start a house, if not I pack up and travel.
I usually have a small, wooden shack made on day 1. It'll have a crafting bench, a furnace, and a large chest. Usually don't get to add a bed until day 2. At least it's enough to keep me protected during the first night.
I dig into whatever hill/mountain is nearby. Make enough room for a few double chests, furnaces, workbench and bed and I'm satisfied. First day shelters just need to last for a couple days till I get enough wood to start on a real house.

For the first day I'm usually mining or something like that. Then for the second day, I'll go back up and build a wooden shack. It probably won't be done by the time the second night comes though, so then I start caving again. Repeat until you've made a formidable base.
After suffering from much constant restart syndrome, I grabbed some basics and tunneled straight down near the spawn in a 3x1 to diamond level. That ended up a with step ladder on one side and a water drop on the other to a multi-level UG condo complete with grain farm cows and chickens, and an open atrium area that I'm currently trying to turn into an UG rainforrest. Scored some mossy cobblestone for it today. I might need to knock out some of those stone brick walls for a more natural look at the back of the rain forrest. Sandstone floors and ceilings look a treat.
Mining is being done off to the sides in a pinwheel pattern from the lowest level (11). 60 x 60 x 3 mined out for 87 Diamonds.
This is also very useful in UHC (Ultra Hardcore); dig 3 blocks down, then put a piece of dirt on top. Dig 1 block to the side, and place a Furnace and Crafting Table.

Usually I tend not to bother with a shelter, I'll either stay in a cave or if I'm near a mountain or hill (Low mountain); I'll just dig into the wall and place a block to stop anything getting in. I don't think I've hardly every bothered with a temporary overnight dirt shelter.

Why build that when you could just dig it out of that hillside in the background for half the effort. That's what I usually do. A lot less ugly too.

I tried it with terrible results. I gave my wife my glasses for a second, a creeper showed up and now my wife is pregnant.

I carve a cozy little cave into the side of a hill, place my crafting table and furnaces inside, and install a door to keep out the monsters.
Simple as that.
2 blocks down. Piece of dirt on top. Snap. If I'm feeling creative, I'll make a 4x6 room with the essentials and a basement to sit it.
