If you have enough eggs, making a chicken farm in 1.8.1 is a worthwhile endeavor. The key here is having enough eggs to start with to hatch at least a half dozen or more chickens.
Between what I had stored at my castle and house, I had 78 eggs. I managed to hatch about 12-13 chickens from those eggs, which is a little better than the average, and let them roam around the inside of the wall around my house. After several hours, I had gotten those 78 eggs back and then some, more than doubling the amount I had. I also had about 25 chickens. Then I hatched some more. At the peak, I had 44 chickens roaming around, and by the time I finished, and killed all of them, I had 107 cooken chicken, just over a stack of feathers, and 327 eggs.
If you have the time and patience to wait around several hours collecting eggs, it can be quite profitable to farm chickens as a food source.
I had a ton of eggs. I made a dispenser, filled it with eggs, then made it constantly fire the eggs. Afterwards, I had about 12 chickens. i left for a minute, came back, and eggs, eggs everywhere. I reloaded the dispenser, which gave me more eggs. I then had nearly 20 chickens. I left again, and had millions of eggs. I kept reloading the dispenser. Eventually I had 50+ chickens.
is the water inside the fenced in area flowing or is it all water sources? I've made designs like this where I had it completely flat with no water flowing and the chickens end up dying, I think they suffocate themselves inside the fences. I fixed this by having flowing water flow into the center away from the fence posts, now they all just huddle up in the center and stay away from the suicidal blocks on the edge
I have a pen with 6 or 7 chicken, but the dont seem to produce egg when i'm not around. Do chicken produce egg only when were close or do they disappear after a while ?

It's only when you're close by.

I blame Minecraft for the letters on my W, A, S, & D keys being completely gone.

After surrounding a roughly 11x16 area inside the wall around my house with fences and two fence gates, I threw 150 of the eggs I had gotten into the area, and got 24 chickens, which is somewhat better than the average (about 18-19 chickens for 150 eggs).
I've gained back a little over half those eggs I threw in about an hour and a half of gameplay.
24 is a managable number, and since they are confined to a relatively small area, I'm not getting the serious framerate drops I was getting when I had 44 of them and let them wander around the entire inside area of the wall (about 48x48).
After I had enough eggs, I removed one row from the middle of the floor of a room, put source blocks on the sides parallel to it, and had the water funnel to one point underneath, then added chickens. I have enough chickens to get four stacks of eggs every time I collect them. It is a good way to get xp without much effort. I have 1100 cooked chicken and half a chest of feathers in storage now.

TL;DR: Chicken farms get out of hand quickly

I can see its flowing.

Minecraft in 3D is the best!
