I like mountains most because they are easy to expand into. If you build on flatlands it requires a lot of resources and planning to expand.

I prefer building on flat lands because it is easily expandable to turn the land into whatever you want. I also use MCEDit. I have my castle on a hill with all the other monuments below/surrounding it.
I prefer to find a flat-ish area that has a good cross section of nearby biomes for easy resource accumulation. Location is definitely mor eimportant than the build of the land, though.
I like the flat areas with no trees because I can see everything, and make it my killing field. Can tell where all the mobs are and which ones are actually a threat.
Either build up from sea level or down on a mountain. In survival, mountains are best to start with because it's easier to defend and you have a wider field of view for picking off the stragglers at dawn. If you love building sprawling villages, flat is likely the better choice. I'd choose an area where plains meet mountains and compromise.
