I'm afraid I don't have any dumb old jokes right now so I'm just going to give the OP a suggestion: edit the texture deleting the grass block. Bam! No more grass. Then install a mod with better grass (don't' know, find it by yourself).
If you don't know how to do it I can do it for you and share the resulting "grassless" texture pack, it's just a matter of minutes.
Its amazing how un-helpful half this community is, Anyway, A texture pack could in theory solve part of your problem but the best way to do it would be to edit your terrain file and erase that tile so that they turn invisible.
Also you could try talking to some people in the modding section to make you a mod that removes wild grass, downgrading wont help because then he'll lose pistons, shears, etc aswell
Also i don't really mind wild grass but I prefer the old mod version, also the offset, even if it is a feature looks more like a glitch because it causes grasses to overlap and over hang of blocks and just look weird

He can't. He hates grass having all the same height and being off centered, no retexturing can change that.
@OP what exactly did you expect from a game that should run on a toaster but barely runs on a Crysis capable PC.

Well, often minecraft users like to call things in the game something different than what they should be called. This isn't the best example, but I know a lot of people call pickaxes 'picks', or handpicks. Some users call axes 'hatchets', hatch doors 'trap doors', crafting tables 'workbenches', etc.. I personally like how people have their own terminology within Minecraft.
I really like the wildgrass, it added a lot of interest to the game for me, made the land much more interesting. And if I don't want it in an area, it's pretty easy to remove. It makes the area look just like the name implies - more wild. You knock it down, and then it looks freshly mowed. As far as it not being in the middle of the block, I assumed the random placement was to give it a more random appearance, and I think that has worked pretty well. I wouldn't mind some variation in the height of the grass though.

It just occured to me, it's a lot of work, but you could use mcedit or something similar to replace all the grass blocks with air. Of course, then you'd have to get your seeds from.... ? Yeah ok, never mind, terrible suggestion.

The original Wild Grass added 7 stages of growth for each grass, with dynamic biome-height. For example: in the rainforest the grass can grow taller than you, but in the tundra there is no grass.
It also added four new kinds of biome-specific flowers and vines which you can climb up. Grass was cut with hoes, giving them a little more use and making sure you don't accidentally demolish your prized field while fighting a zombie.
Notch's Wildgrass has 1 stage of growth, plus 1 extra shrub thing. It's found just about everywhere but the tundra, and is punched to acquire seeds, further making hoes useless.
Do you plant seeds on dirt? 'cause that don't work. Farmland works better
