i have 3 methods
(1.Go to bedrock level than dig. Easy as that. Just mine a 2x3 block and continue making them down for an easy way to put minecarts in after a get the high about and iron and coal and diamond for something like that.
(2.Also i press f3 and search for large mines(mines are big so mobs spawn in them so look for the mobs and you find the mine). I usually doing that method i get: . I never get gold though =/.
(3.I use tnt mining to get all my gold cause it's impossible for me to find without TNT. I think you know the uses of TNT.
If I want to get lots of cobblestone for a building project or something else of the matter, I would dig a 10 by 10 hole (or larger) and just start digging down. It would leave a big hole in the ground and is pretty ineficient when it comes to getting iron and stuff but if you need cool you might get lucky.
If I want ores, I would make a 3 high, 2 wide main shaft and start mining a 3 high, 2 wide shafts that are under my house with a ladder bringing me to the surface of my house.

I mine using the Phoenix X-Mine Technique. I start around layer 16, and keep a bucket of water on me in case I run into lava. I combine this with spelunking when I find a Cave and usually make it out of the mine in around an hour with enough gold and iron to supply my tracks with power should I need it.
Usually pull together enough diamond to keep my tools at diamond level too. It works wonders.
It has to be branch mining at layer 12. Find a cave system, and explore until there is nothing left to explore, and then continue to branch mine. If you're worried about dying, don't bring expensive stuff down with you. Bring iron pickaxes, a sword, and torches. Leave everything else up at your base.
Oh and if you find diamonds, bring them up immediately. Don't want to lose those....
I have tried to branch mine, but I actually perfer sperlunking. It's scarier, but intersting and seems to give more ores without filling my inventory with cobble.
EDIT : I forgot to mention that I usually end up sperlunking becuase I cannot seem to organise a mine without comming into a cave system after 5 min. I once started a mine, dug 14 blocks and I had run into a cave system.
I have the same problem with caverns, I will without fail, start a mine, dig about 5 layers down and fall into a massive cave system stretching from where I started down to bedrock. Makes it REALLY hard to explore it all. 4 stacks of torches later I think I have it all mapped and walk past yet another branch with no torches in it... *sigh*
