I'll occasionally clean it out if I need to pass, or if I want to reinforce the area or shape it. Aside from that, I leave it unless I need more dirt or gravel. I find it's always a good thing to carry some of each when spelunking, to block water flows or lava, to build steps etc.

I clear it usually. I know that there is not a better chance of finding ore behind it (despite popular belief) but there's just as good a chance as finding it behind stone, and dirt/gravel are removed much quicker so what the hell. If I'm not looking for any ore in particular then I just go on though, I can't stand having a ton of stacks of dirt and gravel in my inventory.
i know some people that clear out all the dirt and gravel they find in caves.

It really depends for me. I use a couple of different texture packs for multiplayer. Gloomtasy, PieHole, Coterie Craft... Usually a different one each day. Out of all of them, Gloomtasy is my absolute favorite, but the gravel looks exactly like dirt. No joke. I go to place what i think is a dirt block, and im suddenly suffocating.
But to answer your question, clear out the dirt/gravel simply because i dont like the sound it makes when you walk over it.

Same here, if it starts to get really annoying, I just hit all the blocks I can see then replace it with stone. As easy as that.
