Well, I've now decided to go on a mission to find a saddle. I built another barn to put my horses when I eventually do.
I ran out of wood so it's not quite finished. It's basically the same as the other one but built to the correct height and with a lighter palette, like the other barn it will also have 8 stalls. The entrance will also stay an open 3x2 instead of the 2x2 with doors for the normal animals. The inside of the barn will be slightly different to accommodate the horses as well.
I also saw my first chicken jockey while working on the barn! They're so cute...

The sheer scale of your endeavors is incredible, and you're building really quickly also.
Or maybe I'm just really really slow, haha.
I do build more quickly than a lot of people it seems(at least in my experience on SMP servers I've played on). I tend to stay pretty focused on whatever I'm doing, most people I know have more of a tendency to work on too many things at once. I do have multiple major things going at once(the walls and tower for example) but can still crank out something like that barn in under an hour if I have the materials.
Well, my search for a saddle has been beyond a failure to this point... I spent a few hours exploring the extensive cave systems in my mine(and giant pothole next to the barn which eventually meets the mine caves), two ravines and a number of massive systems came up with nothing. Not a single mineshaft or dungeon, I did hear the effects for several(4-6) dungeons but am quite terrible at tracking them down.
Apparently yesterday was also the day of the jockey... In addition to the chicken jockey, spider jockey!
At least it wasn't a total bust. I got a little iron from all the caving.
I also got a couple decent armor enchants finally as well.
Think I'm gonna go look for a desert next or maybe go random surface caving to look for dungeons, I could do some more work on the tower or wall though...

So I did end up going in search of a desert, to no avail. Or so I thought. Upon inspection of my world render, it seems I MAY have found the edge of a desert(beyond the 18 chunk in game view I run). People seemed more interested in the "building aesthetically" than the "survival" so I won't bore anyone with my minecraft week long adventure in the wilderness of my world. I'll have to go check it out sometime soon though. On the bright side, I did find a rather large mesa biome(like 4000 blocks from my base) with some pretty neat looking stuff.
Other than that, just did some work on the wall. It's coming along.
If it turns out to be an actual desert, I'll have to finish my tower so that I can put in the ultimate function of it... My nether portal. My nether-rail network should be soon to follow, I'll finally get to put my 3 stacks of iron blocks to some use.

I decided to do something a little more interesting before the tower. I wanted to make a nice little farmhouse but didn't really have any ideas for a design. So I went to google images and just searched "farmhouse". This one looked pretty decent and fairly simple so I used it as the model.
This was what I came up with. It was just done by hand from looking at the above picture. I still need some nether quartz for the four front columns but it's mostly finished on the exterior. I'm not entirely satisfied with how the roof turned out but whatever. I also did a bit of landscaping to even out the terrain and still need quite a bit of dirt to finish it up.

I like the look of the farmhouse, but I think instead of smooth-stone you should have used some birch wood planks! Pretty nice job either way.
Continuously impressed by your build speed
I was actually thinking birch planks initially but didn't really have any and I didn't want to go cut down a bunch of trees lol.
I'm actually going to take the suggestion to change the smooth stone though, the more I look at it, the less I like it. I think my first real effort in the nether is going to be getting enough quartz to make the farmhouse white(per blake's suggestion). I think I'll keep the stone brick pillars though, I just don't like the look of completely solid textures for exterior walls in minecraft lol.

Been kinda busy but I did manage to get some work done on the tower. I wanted to make something fairly unique that I hadn't tried before, and so, the floors are created from circles of varying sizes. I think I definitely accomplished a unique look for the tower lol. The pattern I used was 15-13-13-9-7-9-13-13-15-11-7. I still need to put the roof on and there will also be supports connecting the tower to the skybridge at some point.
A few of the floors repeat, but some are original.

Wait, how long did this take you? (Amazing btw. ^-^)
What I have of the tower so far(not including the part below the skybrige) took me a little over 3 hours to make I'd guess(just build time, gathering the stone and whatnot was probably another hour). I'm not entirely sure what my total playtime on the world is anymore lol, probably around 20-25 hours now.
Lol, yeah... I think I got a bit carried away, the top floor sits around ~Y-180. My girlfriend's computer sucks and has a 16 chunk max render distance. I'll try to switch out the screenshots with new ones when I get home. I think my computer is double hers at 32 chunks max.

The BEST way to mine diamond, layer 12 and you.

Yeah. I was just using the materials I knew I had enough of to complete the house, which is a whole lot of stone atm.

Even if I don't like the roof, at least now it makes the tower look like a rocket ship!

Did a bit more work on the wall.
I also decided to do the interior of the house below as a change of pace.
