I started out on Normal, but now I play on Hard mode. There is one exception, and that's when I'm working on a huge building project, which goes by a lot faster on Peaceful mode. Other than that, I play on Hard mode because I enjoy the extra challenge. When I'm down spelunking in some mine somewhere, I enjoy the temporary rush of adrenaline when I hear a skeleton shoot an arrow and miss my head by a few centimeters (I literally almost throw my mouse at the computer screen). Above all, though, I enjoy reaping rewards and knowing full well that I did it on the hardest difficulty.

Easy. I just joined minecraft about 2 weeks ago. I like fighting monsters but I'm not hardcore. I'll switch to peaceful ONLY when exploring those huge branch off caves that seem to never end. As soon as I leave the cave, *click*. Easy mode.

Normal.. i used to play on hard alot but then i took a look at games like CoD and realized anything over normal difficulty on most modern games is just everything set to aimbot insta kill status and you dieing 800 times in an attempt to show your pointless patience, aka there is no skill involved.
Short version: Normal.. play the game how it was designed to be played(peaceful is good too, depending on circumstances, but for regular difficulties, normal takes the cake.)
I play on Normal because I really enjoy getting ambushed and having the occasional hunt and battle while I build cool stuff. Mobs are a great part of crafting and building, a part of the game that should not be missed. I have never thought of going to peaceful for myself, but last Christmas I built a kind of obstacle course through one of my worlds for my wife to go through in order to find clues that led her to her gifts in RL. Turned off the monsters for that.
I played on Normal when I first played Minecraft. Then the Halloween update happened.
I've been mostly playing on Peaceful since, which is good for me, because dealing with day/night crap when I'm building on the surface and dealing with mob-infested caverns is a huge time sink.

The sole difference between difficulty modes Easy-Hard is that mobs do more damage in harder difficulty (easy = 1/2 damage or less, normal = normal, hard = an extra heart for most attacks)
Peaceful. Not that i'm scared of monsters, it's just that I like to be able to go outside any time I want to. I simply can't be assed to deal with them.

I know, but its still just pointless extra damage, you don't get much out of it besides proving to yourself you didn't die, which you wouldn't have on normal anyway, so who cares. I used to play on hard, but meh, it doesn't really make a difference.
Depends on what I'm doing. if I'm just lazily building something and using invedit then I go peaceful, While I do my Lets Plays I play hard because I enjoy the challenge and get to show off my "pro" skills. any other time its normal for me because easy is too... well... easy lol.

I play on Peaceful because I can't handle the combat. I get too jumpy and would rather build stuff.
