I know it sounds really simple, but if you think about it, it's actually kind of tough. The obvious steps are to get a saddle and find a pig, but how you going to get it go off a cliff?
I think the terrain generator should make big billboards, at least one per chunk, that advertise various things like Cheetos or Dr. Pepper. Would really improve gameplay.
The water current idea seems to prevail here... You could also enclose a pig in a small area with a 1-block-thick floor with a huge hole under it, then break the floor whilst on the pig.
I'm going to ride my pig off a majestic cliff through a ring of fire while all the mobs of the land stare in amazement as I slowly ride the pig down to the land of achievements.
Just wait til night and put a bunch of torches near the edge of a cliff so they'll spawn Corral pigs with a fence then hop on and think of Dr. Strangelove.

3. gently coax the pig to a cliff by using a fishing rod with a cookie hooked to the end of the string...
4. profit!!!!!

Half tile will probably be a pressure pad just to block water flow but not get in way of pushing pig. 2 Block tall wall Wood = Door. Dark blue = water source 2 Block tall wall
Push piggy into stream. Saddle and mount. Open Door.
Random pig movement will prevent the corner of the door from being an issue.
