One thing you can try (if you don't mind this method) is to change the difficulty to peaceful then switch it back. I know that they cool down after awhile, but I found it faster to do this method when you realllly need to. Just be aware besides hostile mobs de-spawning, some items (at least this happened the last time I used it) may de-spawn or the items the Pigmen picked up can de-spawn
After over a hundred deaths, I finally solved this.
Seems like instantly respawning after death will unload the nether and keep them aggressive for when you return.
I tried to AFK for a few minutes at the death screen; keep the nether loaded while dead, and that seems to have cooled them down.
I wonder if it also works where you just sit in the nether for a few minutes while there are no pigmen chasing you.

I know you've solved it, but in case it happens again: if you don't hit any more pigmen, you can just run really far away from the angry ones and when you're far enough, they will despawn and new neutral ones will spawn in their place when you return. You might need a swiftness potion to get far enough away from them since they can be a tad speedy.
Now that I'm ready to move up to endermen farms, I'm not sure how to get the pigmen to de-aggro

I made a falling trap that causes all the pigmen that walk towards me fall to their death, and after 12 hours of AFK they're still mad.

I broke into the nether void and walked 10,000 blocks away and came back. They're still mad.
Not sure what else to try, or if I'm overlooking something
