I had a response a couple days ago for the questions, but for some reason it didn't post.
The first Zombie, I trapped within dirt right when the sun was coming up and before I could run back home and get the ingredients to cure him, I heard him burning. Before I knew it, Rotten Flesh popped out.
The second zombie I trapped inside a home (removed windows and replaced with Sandstone). Again, I went to my house (located within same village) to get ingredients to cure and I can only think of 1 of 2 things that happened.
1. A villager quickly came and opened the door and let him out.
or
2. He despawned (I was told by a friend that this can happen?)
*It's also important to note that the 2nd Zombie villager was actually a baby, but my friend also said that you may not be able to cure them.
It was probably the 2nd one. If you're too far away from a mob they have a chance to despawn every game tick. I believe if you're gone for much more than 30s it probably despawned. Also, not 100% sure on this, but I think it doesn't matter whether or not it's a baby zombie villager or adult, you can still cure them.
Another thing just to note, once you've started the curing process (after you've given them the golden apple and hear the noise) they won't despawn any more, and once they become villagers they will never despawn.

I think it is beacuse when you turn away the chunks unload but the entities do not. So the zombie is actually floating with no blocks around when you look away, and it burns. if this is true then it is a bug. I really think the unloading thing should be toggleable.

Uh.. what? When you turn away the stuff stops getting rendered, not unloaded. They're still there, just not visible. When you get too far away from the the area the chunks will unload, but if you get far enough away for the chunks to unload, you've definitely gotten far enough for mobs to instantly despawn (or even long enough for the despawn timer to despawn them without actually leaving the 128 block range.

Does it matter what material you use? because I've based my location in the desert and used sandstone.

Are they breaking the door? If so, use a fence gate instead of a door--they can't break those.
