Lots of players complain how Minecraft is too easy and they get almost everything done in maybe 1 or 2 hours. Then they are left with nothing to do but stare at everything they've gathered in their chests.
A while ago, a nice reddit user made a guide on how to make Minecraft fun again. Like the time when you first started. When the lands were unexplored areas and exploring them and surviving in them was the best time ever. The guide is this: http://www.reddit.com/r/Minecraft/comments/1lag6q/replaying_minecraft/. But I will post it here as well in case you want to just read it here.
Something to keep in mind is that Minecraft is a sandbox game. It is only as fun as you make it. It's not a rescue the princess from the castle game. Take it slow and enjoy your time in it.

Re-Playing Minecraft
This guide is aimed at getting a feeling back in Minecraft that I believe everyone misses with all their hearts. Its a small guide about things you can do to get that “Feeling” back when you first started playing minecraft. This won’t give you a 100% success at it but its close. This won’t work for some people but give it a try! And it’s not a scientific discovery, it’s just a guide from a regular tree puncher.
A few things first
-Fear-
One of the things that comes to mind first is the fear we had when playing our first map. The fear of what’s around you was intense and it created a buzz that was enjoyable. We need that back!
-Reverse strategy-
When we started playing we did stupid things, made stupid decisions and our vulnerability was huge. As we progressed in the game we got smarter and knew that ‘a lot of torches thins out the zombies’. Some of the tips will aim at getting you to do thing like u did ‘back then’.
-Shortcuts-
On my 3rd night in minecraft I had 3 patches where seeds were planted for wheat. Today I create 50X50 fields of wheat. Think small again!
New World Guide
-Before you start-
Set Music and Sound to 100%. Some of us mute the music because it gets old (for some of us). If you already got it at 100% then good! Headsets on.
Set Difficulty to Hard. Yes hard is a must. It’s harder and it’s Scarier.
Set Brightness to Moody. This helps A LOT. Some of us set it to bright because sometimes we can’t see nothing in the darkness. This is a good thing.
Creating a World
Create a new World and give it a proper name!
Choose Survival (obviously).
Optional: set mode to Hardcore.
Rules when Playing
Edit: Added suggestions from Readers
Focus on the aspect of Survival. You are not in a rush to build a Castle and settle down. Think only about you and your environment. Take one day at a time. Live the game.
Don’t spend 3 days collecting stuff and the fourth building a complete mansion. You should build a small house first.
Don’t go big from the start! Instead of building a Melon Farm of 100X100 melons, rather plant just 1 melon next to your house. This seems crazy but it works. When you want melon, Go get your melon, your melon is finished, And your chest is not packed with melons you probably won’t eat.
When it comes to your first house, again don’t go Big! Build a small house under a tree about 4x5. With 1 door and a few windows. Big houses make us too comfy and feel way too safe. Small houses make the world your boss again.
Torches. Keep them MINIMAL. You should actually make a rule to have only about 4 in you possession. When you are in your small house and you look out the window you should only see 1 torch covered in SCARY DARKNESS. Did something move over there?!?
Make your doors Zombie Friendly. We always put something in front of our door to keep all the monsters out. Then our houses become too secure. Instead of a ‘zombie-luring-cactus trap’, just make a door and that’s all. If a zombie slams on it, open the door and deal with him (or them).
Don’t sleep. Reward yourself with 1 sleep every 6-8days. Sleeping skips the night and we have to endure the scary nights we once had.
Have 1 of everything. 1 Stove, 1 crafting table, 1 pet wolf, etc.
Mine at morning, hunt at night.
When it comes to mining, don’t strip mine. The tunnels you mine should be zigzag and crazy (like it was on your first mining day). In long strips we can see monsters from a mile and quickly shoot them down. Unorganized tunnels will provide more surprise monsters.
Again when mining, Use very little torches! Or if you want to you can use all the redstone you get and use redstone torches as a lighting method to create a more scary feel.
Don’t bring everything to your house, Go get it. Instead of building a pond for water next to your house, Go get water when you want it. Plant reeds next to natural rivers.
When you are giving animals food to populate, do it where you found the animals. They should be free to roam where they want. When you need drops from animals you will then have to hunt for it instead of just swinging your sword in a fenced area.
Make use of variety! Don’t just eat Pork chops for 10 days. Try and get something else to eat each night. Do a quest to create some mushroom stew or make some Pumpkin pie.
Build all your houses with wood. Cobble and Stone are too fortified. Wood is basic and old school.
Instead of using iron for armor, use it for other things. Try and stick to leather armor. Color them different colors. Don’t stick to a 1 color full set. Be creative. Try and get your colors to camouflage.
Go fishing away from your home.
Don’t make your yard a Zoo. All animals should be hunted. The sound of thousands of chickens mutes the sound of the scary night.
If there’s something out there, find out what it is.
Try and play minecraft in the night.
Always use leftover bonemeal to plant grass around your house.
Create your portal somewhere magical or interesting.
Use Pistons for small things like pushing a creeper in a cage, don’t use 100 pistons to push a stairway open. Combine them with Tripwire hooks for some small traps to cage a pig.
Don’t build walls around your house. Keep things open.
-more from comments-
Don't use grinders! They take alot of work to create but after that it's just a press of a button to get a chest full of items.
Keep your enchanting low. Enchant your wooden tools!
Optional Hardies: Use /gamerule naturalRegeneration. This can be really hard early game but its only for a hardcore-hardcore style.
Texturepacks can change the feeling but try and stay Vanilla. Its the way its always been.
-Things we tend to forget-
There’s a lot of things we just don’t use that often in minecraft. Make them a priority because they still need attention.
Examples are:
Compass: Create 1 compass and use it. Travel far and always keep this Lucky Compass with you!
Clock: Create 1 and Schedule it when mining.
Cake: Get a cake! It’s your birthday
Jukebox: Try and get a disc naturally and play it in the morning to boost your awesome day forward.
Fireworks: Show the creepers what their gunpowder can do.
Cookies: Eat one in the night.
-Where to build a house-
Build your small house out in an open field that is covered in monsters at night or build it in a forest under the trees. Surround yourself with possible dangers.
-Add a little Role-Play to your game-
Roleplaying can add multiple goals for your world. Instead of imagining to defeat the dragon, rather make the dragon a fairy-tale and hope to one day slay it. Stick to everyday stuff.
-Tomorrow is your birthday. You and Wolfie need to get a Cake for the party. Now go on a quest to get all the items for the cake.
-You rush home to get out of the dark, your door is locked and you have to spend the night alone in the dark.
-You find a cursed Sword in a chest. Only way to get rid of the curse is to kill a Pigman with it and bury it in soulsand.
-Kidnap a villager and make him your slave.
-There's an Enderman that says he has the answer to life's purpose! Kill him with a enchanted wooden sword.
-You can't just take things from that chest in the village! Try and dig a secret tunnel and steal the items 1 by 1. Remember to get into your black leather thief suit.
-You find a paper describing a cookie recipe to "find yourself'. Plant cocoa in the highest jungle tree and craft this magical cookie.
-You are cooking a meal in the night and when you start eating it you realize you just swallowed the hottest chilli you have ever tasted. Rush through monsters to get milk from a wild cow.
-Etc. Get creative!
-Mods-
Mods can add new things and get you all interested again. Go for mods that add challenge to the game, not shortcuts or luxury.
-Ambient-
Another thing I found that really helps bring back the scary in minecraft is Ambient music. What you can do is download scary ambient music or search through your other game files for their ambient sounds and play them in the background. Suggestions are game files like : Amnesia, Skyrim, Stalker, Etc!
Hope this help and have fun fooling around.
One thing to note is that this guide isn't meant for players new to Minecraft (though you can still use it). New players already have tons to do, places to explore, and things to learn on the game. Their fun isn't done yet. This guide is meant for players who have played long enough to where they know almost everything about the survival part of the game, and have done nearly everything, and because of that they are bored. This guide will be more helpful to those type of players.

Yeah, that guide made me enough Minecraft much more.
Before what I used to do was right when I started the world, I would make huge farms, 1 house and store everything in chests in the house, and collect animals in a fence, and be bored again. That is what I think a lot of other players do as well.
After reading the guide, what I now do is explore a bit, look for a nice place to settle. Make a house with actual different rooms. Bedroom, bathroom, kitchen, attic, and etc. If I need to cook a lot of stone or something, i'd make a large forgery. This made it more enjoyable because I wasn't sitting in 1 house and doing everything in there. Having different buildings for different things helps. I've been playing on this new survival world for a few months now and I haven't even visited the nether because I have so many other things to do now. Can't begin to imagine how much stuff could be done there after reading that guide haha.

Eh, this just sounds like a way to make the game really hard, tedious, and unenjoyable, completely incompatible with how I play; not like I need anything to get back interest either.

That's fine. This guide isn't meant for players who already enjoy the game and have their own things to do. The guide was made for players who felt like they had done and achieved everything in Minecraft and has nothing else left to do.
Vanilla was boring for me until FTB Technic & Normal mods
Yeah. Mods give that feeling that you don't know everything about the game yet again. That's the sort of feeling players want again. Where the world is unexplored and there are many things left to do.
Yeah:D When the user posted this to the subreddit, it was liked by many as well!

If Survival is getting boring then make a command block shop or make command blocks to teleport to other places. You can also kill the ender dragon.!?!?
I tried nomadic once. I thought it was an amazing idea and would be doing it all day, but once I got into about 20 mins of it, I was bored. Like it was just walking and walking and walking. What motivates you to keep doing that?

Is it okay to build out of hardened clay or bricks? Ill tear it down if not okay.
You don't have to follow the guide exactly. It's just showing you how to improve your gaming experience. If you've built all of your wooden houses, then you can move on with better houses using better blocks. Otherwise you'll be bored again by just using wood all the time.

All the things on that, I have done already. I've made a beacon, defeated the Ender Dragon, made an epic base in a stronghold, a desert temple, and a jungle temple, found a mushroom, raided 4 villages, and done practically everything there is to do. What can I do now? I've also got a semi-automatic wheat farm, a semi-automatic cocoa bean farm, a semi-automatic melon farm, a semi-automatic pumpkin farm, a fully automatic enderman mob grinder, a fully automatic regular mob grinder, and several other awesome things. Again, as I asked before, what can I do now?
Did you read the guide at all :P?
You basically made the game boring for yourself by automating everything and becoming completely safe. Read the guide, it tells you how to make the game fun again.

Do you agree?
Agreed. But, eventually the modpack will become stale just like vanilla. You can even follow this guide with modpacks. That will make it twice the fun!
...I might have to try that...
