A door that rises from below ground. Would require about 4 pistons from my calculations. And some interesting redstone layouts (well, complicated for me anyway). I'll be sure to have fun when they are added.

Theevilpplz is so fabulous, hetrosexual men turn bi when he passes by.
This is how they should be used. If I have the wrong idea of pistons, just a platform coming out of a block, please tell me.
Pistons push the blocks in front of them when they are given redstone power, and you can orient the face used to push blocks. Not quite like in Portal....

Well of course it wouldn't be anywhere as flexible as the panels min portal but do I have the right idea?
It's just a block that increases to take up two blocks in a given direction, by pushing other blocks away. The key is that being able to manipulate blocks automatically, and without having to destroy and re-place them opens up a lot of possibilities. We can now make water and lava that can be turned on and off, traps which push blocks or players to steer them into hazards, various sorts of automated lighting, elevators, bridges, walls, among other things.
Combine it with the Elevators mod for bukkit. Use a couple creative "/elev redstoneout" commands to make either vertical elevator platforms that launch you, or push stuff on and off the elevator. Too bad pistons is a single player only mod right now and elevators is SMP only. Once notch intigrates pistons into the game, maybe they'll work in SMP.

If you think the title and OP tells you everything you want to know about a thread, don't reply. If you want to actually read the thread and post an intelligent reply, you're welcome to it.
I liked a lot of the ideas I saw from one video like the lava bridge, midrange TNT cannons and moving bookshelf, but there is a lot you could still do. 100% automated reed farms are now possible, you simply stand in the collection area and a set of pistons on an extremely long redstone loop will push out on the reeds every minute.
One of the first things I'd try to make is a crusher death trap.

SPLAT!
Just watch out for R2D2 taking control of your trash compactor. I hope it does crush mobs/players, but at the very least it'll trap them if it won't go into a block already occupied by something that can't move.

Do you have a lovely bunch of coconuts? Do you have them all standing in a row? Are there big ones, small ones, some as big as your head?
An incinerator you can turn off and on. Making it less dangerous.

Of course my good man , in they year of '86 I was browsing some of the caves in my world looking for a tad bit of coal to keep my abode warm. And what do you know!?!?! a giant combusting scrotum snuck up on me!
Here is a mob trap idea:

The pistons activate in a rotation from top to bottom. It only works if mobs can spawn on pistons, but if they can this trap should be ultra-efficient, with very little wasted space. The signs(frames) are there to hopefully prevent spiders from spawning in the trap, as they might gum up the works. This is only a small view of it, this trap should be extendable. Of course, I'm making some assumptions with this design, if pistons cannot power connected pistons some changes will be necessary.
(stair = piston, half-tile = extended piston)
A few:
1. analog clock hands.... I think this would be effin epic.
2. Previously mentioned rebuildable walls.
3. launcher (I saw in pinball video).

Something like this for a falling death trap.
