I like the fact that wooden slabs are fireproof. It gives people who like wooden houses on multiplayer a griefer resistant material. Please don't fix that, Mojang!
Not so much a bug as the way the physics are programmed, but.....
The way boats will quickly rise to the top when underwater is awesome. BOAT ELEVATORRRRRRRRR!
This times eight hundred bajillion. My 20-floor mega-base tower I'm working on would not be practical without boat elevators to make for quick and efficient vertical movement. Only way I ever want to see that go away is if it's replaced with some kind of wall rail system, like minecart rails that go up and sidways along walls, or something.
You can't o_O...unless you're talking about making water flow upward gradually and through the use of a crap ton of signs and water blocks. The others are talking about how if you put a boat in a waterfall, it shoots up.

The water ladder he is mentioning is if you have a 2x2 square maybe 4 blocks down (or howmany as you want) and on one corner you put a pillar of water, then the opposite corner you have nothing, and then the two other corners have any block (dirt, cobble, stone, ect..) blocking it off, then allowing you to use the [Space_Bar] to climb up like your in water, except faster!
Also boat elevators are sweet.

This, and every other glitch you can exploit from minecart physics. (Woo! Forcefields!)
YUM YUM YUM!
I just hope Notch doesn't fix them. They're rather fun to use.
Yeah, How?
Basically, you have water flow into a half block, then source water on top of that, with a sign to keep that from flowing back.
