I have a tree, reed, two wheat farms, and a chicken coup. The others are nothing special but here's the chicken coup. It's mostly done, just need to finish wiring the 9 dispensers on the second level and build the outer walls.
The bottom layer of the second level, holds the water up.
The chickens, they talk in code but it's something about a three legged dog. Mayhaps i'm mistranslating....

Giving a grand tour to this fox, you can see the farms in the background. Tree farm is too close to the chicken coup going to have to modify it when I start on the outer walls.
The wheat is placed one block high such that you can never trample them. They also have a block behind them preventing harvested wheat and seeds from falling outside of the players reach. This idea has been taken from Hans Lemurson.
If the cacti grow they automatically break of and drop downwards but unfortunately sometimes the blocks are destroyed by the cacti. I still need to think about how to improve their efficiency.
The reeds have enough space to grow three tall. The entire farm is contained in an 11x11 building and has a total of 10 small chests for storage of tools and the harvested goods.

I'm still looking for more feedback on my configurable Redstone Gate mod. All gates and common circuits (such as e.g. clocks, edge detectors, latches and Flip-Flops) in a single block.
This is the basic farm that I use on all of my worlds, at first. It's usually 2 rows of 5 each, with one or two reeds (if found) each as well. Generally, I'll use as little water as possible, but it's an island, so I used as much as I wanted.

Well, my farm is not the grandest, but I like it. Except it is often flooded by clouds.
I happen to be very satisfied with the lava lighting. About half the time I spent working on the lights, I was running back and forth putting out fires. That's why you see the stone near the lava. Also you can see in the back, there is a patch of grass. Theoretically, animals would spawn there so I could get their sweet loot, but it doesn't work. I might design a new layout for the crops to utilize that space, but the farm yields enough.
I tried to get everything packed in as tightly as possible. That's 32 wheat, 18 cane, and 8 cacti.
And there it is on top of my house. I still have a lot of work to do on the house, there is a lot of room to expand, but it's hard to get motivated to build rooms that don't really do anything.

The pattern can be repeated infinitely, but I have restricted myself to a 20x20 room here. It is almost big enough to allow non-stop harvesting of lumber. Each torch illuminates twelve trees, though 16 is possible if you don't care about pathways. Grown trees will never block light to any of the saplings.
The water is purely for decorative purposes, but could be altered to gather fallen saplings at a collection point (I'm at bedrock here, so there is not enough space to actually do so without raising the floor).

You need to upload them from your computer to an image hosting site such as photobucket or imageshack, and then put them in your post using the simg tag (). If you have troubles, search google. Probably the most asked question on all forums, ever.

So, did you intentionally plant a lot of trees close together so that you could grow a single tree faster (due to the uncontrollable nature of tree growth time) ?

This effect always plays a role, regardless of the layout. If you have more trees then some of them will grow faster. Waiting for a single tree to grow can take ages (figuratively speaking).
Other, more common patterns are much more dense than mine. E.g.:

My pattern was created solely to emphasize the overkill of torches most people use. Light intensity decreases by one level each block, but I'm not 100% sure about the rules of how it bends. In my circular pattern, bending of light is no problem as there is always a direct line of sight between torch and sapling and none of the trees can break this line of sight when they grow.

Above the torch is a pillar with ladders leading up to the next level (separated by 8 blocks).
Each level has a total of 16 trees and a single torch. Because it's built outside, there a lot of space for leaves to grow such that it generates plenty of saplings.
Naturally you can replace the stone with any material of your choice (e.g. glass).
Here it is almost fully grown:
This one has 5 levels for a total of 80 trees. Once fully grown it takes about a day/night cycle (i.e. 20 minutes) to harvest and yields a total of 6 full stacks of wood.

I decided to not put any saplings on the ground level such that I don't have to worry about monsters creeping up on me when harvesting during the night.
Here I'm standing on a level looking at the inside:
And this picture was taken 20 minutes later:
It is fairly quick to build, yields plenty of wood and saplings and is quite safe to harvest (when fully grown some monsters might spawn on the leaves, so putting in an extra torch on the ceiling wouldn't hurt).

Here's mine, it's nothing special just wheat and some sugarcane. I very rarely harvest, so it's mainly an aesthetic thing. I would like to add trees to the mix somehow though, any suggestions? And what is the ideal height for a roof on a tree farm, so that I don't have to jump on any blocks to harvest the logs?
It doesn't have the greatest wheat collection (about 26 each full harvest) but it keeps the breadbox full when it's time to explore a monster filled cave. It's also pleasing to the eyes, and often come relax and watch the wheat grow.

This is my Mod World Farm. I'm using Xie's Farming Mod, it adds Watermelon, Pumpkin, Flower, Lettuce, Tomato, Corn and Cotton Farming to the Mix (And Fruit Trees). You can just ignore the other crops.
I find my regular wheat section of my farm to be the best type of farm in Minecraft. The 2 lane structure with water along the sides. This allows for easy harvesting, as all can be collected without trampling the soil. I use this on all my worlds now.

How did you stack the wheat block on top of each other?
Its part of the Mod. Known as "Hybrid Wheat" Its used in seed splicing to make more complicated crops like tomatoes. Why it stacks I'm not entirely sure, I just think it looks weird without its own graphic. It just grows naturally like that with the Mod.

But i have a tree farm which gives me more than 10 stacks of logs (40 stacks of planks for you who cannot do maths).
