I love goin out at night in hard mode. You can just kill monsters and get XP (enough to fill the bar 20 times on a good night) and gathering resources
Its just fun in general. With a good armor suit u can withstand a lot of attack, although you will go through about one iron sword in one night. It yields a lot of useful resources like gunpowder and bones. On hard, the zombies wear armor that can be dropped on occasion. and skeletons can have enchanted bows that can be dropped,
So anyway, who else does this?

To me, it's the most exciting part of minecraft, sometimes. I always need bonemeal for farms and such, and gunpowder never hurts. (well, not entirely true. Hehe.)
I myself find that a lvl 1 enchanted stone sword will carry me through a single night of battling. They're cheap, effective and replaceable.
The gear that mobs can wear also makes it interesting; usually i'll try to obtain at least one rare drop a night. It's a fun and quick way to get a hefty stockpile of bows, too, I find, which is handy as they happen to be my favourite weapon.
Oh, and it's nice to meet a glowing pair of red spider eyes in the dark. Potion effect spiders freak me right the hell out.
I don't play hard, but I do the exact same on Normal.

I do, all the time. Its one of the best things about the game, night combat. With my trusty enchanted diamond sword I usually spend the time defending my villagers from the hordes of mobs.

It can get really fun to do this in a hard-to-traverse setting where you have low visibility, such as a forest (where my house is, incidentally). It gets really intense when you're trying to run between trees, avoiding creepers, turning corners and running into hostile mobs...It really makes the game fun, the combat part, in my opinion.
I switch on Normal and go out at night when i need mob drops, but otherwise I play on Peaceful. I like being able to enjoy the Minecraft world at night without getting killed every other minute. There are games in which I really enjoy the combat element but Minecraft isn't one of them.
I never play on Hard but while building my base I'll often work at night, fighting any monsters (usually zombies) that come in, and I don't mind at all coming out of a cave at night and having to walk back to my base in the dark.
BTW, if you are just going out to get XP (which I get for enchanting by mining Nether quartz as a one-time thing as I then just repair using XP from regular gameplay) it doesn't matter whether you are on Easy or Hard; mob spawning is independent of difficulty (unless you want to make a Nether portal gold farm as zombie pigmen do spawn more often from portals on harder difficulties).
Of course, I constantly fight monsters while caving, killing 2-300 per play session and getting around 4-5,000 XP, mostly from mining ores, making even expensive tools like Efficiency V, Fortune III, Unbreaking III pickaxes cheap to repair (37 levels, 1,406 XP per repair, which I do about twice per session).
Its boring when you pretty much beat the game. I mean when you have full enchanted diamond armour, and sword that can one shot anything. At that point, mobs are just things to make farms with and a slight annoyance.

if u have a suit of iron armor, damage is greatly reduced. standing next to a creeper wont reduce more than 2 hearts. skeletons take 2 arrows for the damage to even show up in the hud.
also one time i killed a skel who had an enchanted bow and it was power 2
I play on a server that's on hard. We rarely sleep. So you have to go out at night, whether to fight mobs, or travel from one base to another, or just working on a build. I think it helps that I've been playing since before beds, so working through the night became a necessary skill, now my friends and I just keep on, moon or sun.
eh i dont really go out unless i need too. no sense endangering myself and my buildings for a bit of XP i dont need.
actually the chances of dying if you have full iron gear is pretty low. ive done a total of 100 nightouts and only died twice. since i do it close to home, i was able to get all my gear both times, and i just nightouted again to regain the lost xp.

The armored undead, the regen/speed/strength/invisilbe spiders, dealing with the latter on a full moon (That is intense man).
